Taco Chicken Soup

Mexican Rice

Fabuloso! It is really easy, tasty and filling. I made a few minor changes. I added 1/4 tsp cumin and 1/2 packet of Goya Sazon Con Culantro Y Achiote. I also used 1 drained can of whole kernel corn instead of fresh corn. I threw it all in the rice cooker. I also left out the cheese. I will definitely make again. I served with Mexican Corn Bread (recipe on allrecipes)

Creamy Chicken and Wild Rice Soup

I followed Carrie's lead and sautéed 1/2 C. each of onion, celery and carrots w/ 1 tsp minced garlic. I used the food processor instead of hand chopping. I used the leftover breast from a store bought rotisserie chicken and the juice. I also used the food processor instead of shredding the chicken. I used 2 C. fat free half and half, 6 Tbsp margarine and 1/2 C flour. I added about 1/4 C more broth at the end because it was really thick. The soup was very hearty and was flavorful yet mild. Very comforting. A meal in itself.

Elegant Mushroom Soup

Really good flavor, cheap to make and super easy. I used baby bella mushrooms. The only changes I made were using a good pinch of thyme instead of nutmeg because that is what I'm used to using. I also omitted the sour cream garnish.

Southern Candied Sweet Potatoes

I have used this recipe several times over the years with great results. I used brown sugar as well. Tastes like my mom used to make. When I lived overseas and couldn't get fresh sweet potatoes I used drained canned sweet potatoes and it still tasted great.

Quiche Lorraine I

This was my 1st quiche! It was easy tastes great and makes a beautiful presentation! As usual, I did make a few modifications. I used a deep dish pie crust. I used half & half ( I used 1 1/2 C. instead of 2 C.) I used 8 oz of swiss and 1 package of low sodium bacon. I added a well drained can of spinach. I used dried chopped onions and 1/4 tsp. dried minced garlic. I used 1/4 tsp. of McCormic Creole seasoning instead of cayenne pepper. (It's not enough to make it spicy or alter the flavor much.)

Shrimp Etouffee II

This was really good. I did it on the stovetop. I chopped some canned tomatoes because I didn't have tomato paste. I added a bay leaf, 1/4-1/2 tsp creole seasoning and 1/2 tsp of worsteshire sauce. I also added 3-4 Tbsp of milk to thin the sauce at the end. (I did not add the cayenne or hot sauce) My husband LOVED it. I will make 2 batches next time!
