I followed Carrie's lead and sautéed 1/2 C. each of onion, celery and carrots w/ 1 tsp minced garlic. I used the food processor instead of hand chopping. I used the leftover breast from a store bought rotisserie chicken and the juice. I also used the food processor instead of shredding the chicken. I used 2 C. fat free half and half, 6 Tbsp margarine and 1/2 C flour. I added about 1/4 C more broth at the end because it was really thick.
The soup was very hearty and was flavorful yet mild. Very comforting. A meal in itself.
