Simple Grilled Lamb Chops

A little too acidic for my taste. The meat was very tender, but it overpowered the natural taste of the lamb.

Enchilada Casserole II

I was concerned about the flour tortilla being to mushy based on the other reviews, so I used a little less tomato sauce. Turned out I should have used MORE - it just seemed a little too dry. We added some taco sauce on top (and sour cream) and it was much better. I also used taco seasoning, black beans,and some fresh tomato.

Chicken and Corn Chili

Very good as is, but with some changes its a 5! We cooked it on the camp fire in cast iron which added to a great taste. So, we didn't cook the chicken then shred it. I just cubed the chicken. Instead of canned salsa I used fresh home-made salsa (tomato, green pepper, onion, cilantro, and a touch of hot sauce) plus a small can of tomato juice. I also used black beans and frozen corn, instead of canned corn.

Happy Shrimp

Eh. I added scallops, green/red pepper, and mushrooms because we love veggies. But, it was still kinda bland. Needed maybe more garlic, or some parmesan cheese?

Amy's Cilantro Cream Sauce

I wasn't overly impressed. I love cilantro, but this just didn't really have the flavor of cilantro I was looking for. I may try it again and try to doctor it some more.

Chicken in Savory Lemon Sauce

Not bad. I made a few changes - I used chicken thighs with bone and skin and browned them for longer. I also used twice the liquid and replaced the water with 1/2 sherry, 1/2 chicken broth. I liked the flavor, but it had just a bit too much lemon. Definitely needed the sherry/broth in place of the water because it would have been too bland without it.

Primo Spaghetti Sauce

I didn't have enough red wine for my normal sauce, so I used this as a base to make a different sauce. Very good. It felt like it was missing something, so I added a pinch of cinnamon and some sugar. Great!

Fried Rice Restaurant Style

This was great! I left out the carrot because I hate cooked carrots. I would have like to have measurements for the soy sauce and sesame oil since this was my first time and I had no idea how much would make it taste right, but after a long time of adding a little bit at a time, it came out perfect. I would say my measurements were about 2 Tbsp of Soy Sauce and 1 Tbsp of Sesame, but I used half the amount of rice and I love the taste of Sesame oil.

Scottish Shortbread IV

This recipe was outstanding! It was my first time making shortbread, but it was simple and tasted great. I used cookie cutters to make shortbread ducks and dogs. I would maybe add some colored sugar on top next time for decoration - but tasted great!

Old Italian Meat Sauce

Spinach Tortellini Soup

This was good, with a little substitution. First, I used spinach tortellini. I used fresh spinach, not frozen. I also added some white wine and some chopped onion.

Better Than Best Fried Chicken

I've made several fried chicken recipes before, but I like this one the best. It is really messy, but well worth it. I added some chili powder for a little "kick"
