Sweet and Buttery Turnips

So I In the spirit of adventure and because they were dirt cheap, I bought some turnips and now I know why there's, like, 5 recipes for turnips. Half the receipes on this site call for a half pound of bacon and copious amounts of butter. No kidding. Even with the added spices and mashing -- no matter how I wished them to be like mashed potatoes these suckers had a life of their own. They retained their diced shape -- no matter how much mashing I subjected them to. The hubster, a man who claims to love vegetables and would like to go vegetarian but in reality will only eat maybe 3 vegetables (green beans, cauliflower (raw only) and I'm hard pressed for third vegetable), was very adventurous in his forkfuls...and I had to call it early -- Dear God Man! Back away from the turnips! I still gave the receipe 4 stars as it's not the recipe, we just don't dig turnips.

Layered Chicken and Black Bean Enchilada Casserole

This was terrific and it hit the spot. So easy to put together too and a nice rich result. It was plenty spicy, I can't imagine adding more spice or another can of chiles, as some have mentioned. I think adding more spice would make it inedible. I had homemade guacomole on the side. The hubster doesn't care for sour cream. We had leftovers all week. It was just as good on the last day as the first.

Pan Fried Catfish Filets

Well. Made for hubbie's post birthday special dinner. Garlic in a pan, even on medium heat, for over 15 minutes will produce crisped burnt garlic. Had to remove garlic with slotted spoon after first minutes as it had begun to burn. Putting meal mixture in a bowl is the way to go. I used trusted paper bag method and it didn't cover half as well as I wanted. Frying anything in extra virgin olive oil isn't a good idea as it has a low smoke point. Cayenne pepper overpowered the coating. My fillets were thick and required more oil and time to finish cooking. Using just milk as a coating (without egg) didn't produce a thick enough crust for my taste. All in all, a disappointing experience.

Coconut Poke Cake

Hubbies birthday is TODAY. And this cake was a disaster. Used Devil's food cake mix, pudding in the mix, made according to instructions. Used coco milk, with condensed milk (many others did same also put in in microwave to thin out...) Looked great like it all soaked in. But then cake failed to release from bunt pan. One third completely sogged out. Could be I needed the cream or micro thinned too much. Cake is a slobbery mess. Now to be Bday Triffle!
