Mock Tuna Salad
Great vegetarian lunch! Mashing all the beans with the fork was hard, but definitely worth the effort. (I probably burned off enough calories for what I was about to eat. Seriously.) I didn't use the sweet pickle relish because I'm not a fan of it, but other than that I followed the recipe to a tee. We had ours in lettuce wraps aside a bowl of cold cucumber soup. Delicious!

Broccoli Chicken Fettuccini Alfredo
This was delicious. I made enough to feed an army, and my mom and I nearly finished off the whole thing! Instead of linguine noodles -because we don't have any - I used egg noodles and omitted the parmesan (we put this on top when it was hot instead so we could balance out the taste to our likings). Added mushrooms and a dash of salt for flavor, but this was seriously good.

Sauteed Apples
This was good. I was too lazy to peel the apples, so I just left them on. I kind of eyeballed all the ingredients, because I was weary about all that butter (I'm on a diet), and ended up using only about a tablespoon and a half of blue menu margarine. I also like my apples a little tart so I cut down on the sugar and added a squeeze of lemon juice. It took longer for me to boil before they were done, but they turned out great! Thanks, 356!
