Christmas Green Chile Egg Casserole
Delicious, with adjustments. I served it with some tortillas and hot sauce for people to make their own breakfast burritos. Flavor and mouthfeel adjustments: used 3 cans of diced green chiles (2 mild, 1 hot), sauteed a yellow onion and 1 clove of garlic with a little chili powder, used a mix of jack and cheddar cheese. Healthier adjustments: did not use any butter, reduced the cheese to 3 cups instead of 4, and used reduced fat cottage cheese. 3 cups of shredded cheese is still plenty for an egg casserole, and the butter serves no purpose in this recipe other than adding flavor (and a ton of extra fat). Also used 1/2 cup of flour as called for in other versions of this recipe floating around on the internet. I think it needs the extra flour to help it set. Baked it in a 9x13 casserole dish and it definitely served more than 8!

Avocado Green Goddess Dressing
I used plain yogurt instead of mayo and it was perfectly delicious! Served it on an arugula salad - nice contrast of peppery greens with creamy dressing. I will make it again and experiment with different herbs - dill or cilantro, for example. Great low fat dressing if you use yogurt.

The Best Rolled Sugar Cookies
I'm not a huge fan of sugar cookies, but I think that's because I usually end up being served box mix or slice & bake premade dough cookies. This recipe is SO much better. I made half the recipe and my only change was to use vanilla bean paste instead of straight vanilla extract. The cookies look beautiful with flecks of vanilla bean throughout the dough, and the flavor is a little stronger than extract, which I prefer. I did need a fair amount of dough to roll and cut out the cookies because it is a very sticky dough. The first few I tried to roll between plastic wrap, but cutting those out didn't work well, so definitely use flour to roll and cut! I will use this recipe again in the future, and might experiment with other spices and extracts like ground cardamom or almond extract.
