Sloppy Joes II

So much yummier than the can. The family loves it even when I sneak in extra veggies like zucchini. I've made it with elk, antelope, turkey and regular beef. All awesome.

Mama's Asian Chicken and Rice

Made a quadruple batch tonight so we could have leftovers. Needless to say there wasn't much left over. It's a favorite every time. Only thing different I do is leave out the crushed red pepper. The kids don't like it spicy, and so whoever wants it can sprinkle some on later.

Beet Salad with Goat Cheese

Exceptional! I placed the beets into the dressing and marinated them for about 1 hour, then removed them and placed them on a bed of arugula. I did however need to skip the walnuts since our kids are HIGHLY allergic. This is a definite keeper. I'll even plant beets in my garden next year just for this.

Cheesy Pizza Fondue

A HIT!!! I made this for our Girl Scout Halloween party and called it "Witches Cauldron". They were lined up. I cut crusty french bread into 1 inch cubes and had them poke it with skewers to dip it in the cauldron. Lots of fun. The cheese didn't mix in all the way, so it gave it the ick factor it needed for the day. Will do it again.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

WOWZA!!!! Everyone loved it. I made this tonight for our friends, and they absolutely loved it. It was delicious, but I think next time I may cut down on the brown sugar. It's a tiny bit on the sweet side for me. Liquid smoke adds an extra dimension to the taste...Don't skip it! Only change up was that I use apple cider vinegar instead of white. In hind sight, I'd mince up the onion even more so it will be a "smoother" sauce. All in all this is a keeper recipe. I will definitely make my ribs like this from now on. OH...I did double the recipe. I believe it's a must when you like to have extra dipping sauce. Our guests wanted to know the recipe...I just told them they had to come back again ;o)

Indian Shrimp Curry

A hit!!! Great flavors. I didn't use the tomatoes because my youngest hates them....instead I used some chicken broth and also fresh ginger. At first they thought that it looked "to yellow" (turmeric), but after the first bite, they were hooked. Served it with Jasmine rice...our favorite.

Rhubarb Strawberry Crunch

Super yummy. My 10 year old daughter made this tonight, and it turned out great! It was her first taste of rhubarb, and she licked her bowl. Dad loved it too. This would be great with other fruits too. Nice basic crunch recipe. Easy enough for a 10 year old!

Ginger Glazed Mahi Mahi

FANTASTIC!!!! Five stars was not enough. Made this for our Sunday supper, and even the non fish lovers LOVED IT. I did double the recipe and it was a good thing I did. They were pouring the sauce over the coconut rice I made to go along with the fish. I did want to lighten it up a bit so I grilled it on the BBQ on top of heavy duty foil. No hassle clean up too. Fantastic! We will be trying this on chicken also. YUMMMMM

Banana Chocolate Chip Cookies

Fantastic! My kids loved it, and it was a great way to use up the old bananas. My cookies turned out more like mini cakes...no problem with that, I love softer cookies. It's great knowing that they get some "extra good stuff" when they eat these. Definitely a keeper.

German Red Cabbage

We all went back for seconds and thirds! The only changes made...I used 1 apple and chicken broth instead of water. Served it with roasted potatoes and pan seared pork loin. Washed it down with some Guinness. Mmmmm.

Banana Banana Bread

Always a winner at our house. The only change up would be that I use whole wheat flour and add some cinnamon. The kids love how dense it is, and it lets them spread some cream cheese on it without killing it. Hubby did ask if next time we could add some raisins to try it out...the kids want chocolate chips. We'll see.

Mexican Cucumber Salad

Used fresh tomatoes, cilantro and cucumber from our garden. It makes all the difference in the world. I didn't use red pepper flakes, but opted to use a few dashes of Tabasco. Would have rated this recipe a 5 star if everyone in the family liked it as much as me. I will be making this again regardless.
