Slammin' Salmon

Followed the recipe to the letter. Only cook 4 servings at a time so I halved it. Marinated 2+ hours. Grilled on the BBQ along with foil wrapped summer squash. Superb!

Authentic New Orleans Red Beans and Rice

I followed the recipe to the letter, except omitted the tabasco sauce at the end. Simmered on low for 5 1/2 hours. Served with corn bread. This was FANTSTIC!

Sausage Egg Casserole

Linguine Pasta with Shrimp and Tomatoes

Followed the recipe except I had no Cajun seasoning so I substituted Emeril's Essence. Have a bounty of fresh tomatoes , so I skinned and diced vine ripened beauties. This was fantastic!

Classic Waffles

This is a great recipe - no tweaking required! I make a double batch, place slightly undercooked, cooled waffles on a cookie sheet, flash freeze, then place in ziplock freezer bags. School days - kids pop one in the toaster - voila - homemade goodness without the chemicals of store bought. Plus making a large batch once every two or three weeks is very easy to achieve.

Traditional White Bread

Honey Glazed Ham

I do not like ham. But, I had to bake one, so I tried this recipe. I now love ham! I had a 10 pound ham, basted like clockwork but had a lot of glaze left over. Next time I will cut the glaze ingredients in half. I carefully folded two sheet of foil together to line the roaster. Practically zero work to clean-up.

Pork Chops with Garden Rice

Chinese Cabbage Salad I

Green Bean and Potato Salad

My family asked that I never make potato salad with mayo again! This was sooooo good. I did cut back on the amount of olive oil, but that was the only change. No need to fear taking on a picnic or to a BBQ, excellent hot, cold or room temp.

Chewy Chocolate Chip Granola Bars

These were so easy to make. The kids absolutely love them and they are way cheaper (and better for them) than the store-bought variety. With todays' economy I need to save wherever I can. We try different add-ins, fruits, nuts, flavors. It's all good.
