My Crispy Mashed Potato Pancake

Creamy Rice Pudding

I followed the advice of one who said to cook rice and sugar and salt together. The flavor was good but it was alittle starchy. Maybe i needed a bit more milk. Will try again as i know it was me that did something wrong. (and i did use med. rice).

Eggplant Parmesan II

This was delicious. I used two jars of ragu and 4 cups of mozzarella cheese. Pretty much followed the recipe, just added more when i thought it needed it. Three cookie sheets of sliced and breaded eggplant baked at 400 for 10 minutes on each side. Looked and cut like lasagna but tasted like yummy eggplant parmesan. I did not sweat the eggplant. It did not need it. You don't need to salt it either. I oversalted it but it was still the best. Thanks for a great recipe

Baked Pork Chops I

soooo good. I didn't have any white wine but it still tasted yummy. Served it with buttered green beans and double baked potatoes. I didn't change any other part of the recipe. Will make again. thanks

Slow Cooker Beef Stroganoff I

This was so yummy. I made a few changes tho. Doubled the cream of mushroom soup (did not have golden cr. of mush) added a jar of sliced mushrooms, doubled water and worstershire sauce and added a beef stew season packet with cut up beef stew meat and chopped onions. I cooked in slow cooker on high for 3-4 hrs. then turned down to low for about 2 hrs. I used about 2oz. of cream cheese and 1/2 cup of sour cream near the end. Served over buttered noodles and baby peas on the side. I took some over for my mom and dad and they loved it. This is a keeper. thanks

Basic Ham and Bean Soup

Best bean soup i've made yet. Changed a few things. Boiled beans and onions for 1 hr. then transferred to slow cooker and added ham bone, chopped carrots, ham, chopped tomatoes and seasoning. Cooked for 4 hrs. on high and thickened. Served with corn muffings and add fresh chopped onion on soup. Yummy so good. Great for cold michigan evenings.
