Lori's Famous Crab Cakes

These are sooo good. I'm sure they are perfect the way they are written, but I made a really fun adjustment. I used the red pepper, but instead of green pepper, I shredded half a zucchini with my standing cheese grater and put that in the mix. I think it helped everything stick a little more. Also, don't worry if you don't have some of the things in the recipe. I've made them with and without parsley, hot pepper, green onion, and old bay seasoning. The recipe is very forgiving like that.

Seafood Paella

This was pretty good...I found it spiced a little mildly. I'd add more salt, pepper, turmeric, and chili powder next time. In all honesty, if I had added cumin and curry, it would have been been my normal curry recipe. So-long story short-tastes good, feeds a lot of people (good for a family meal), but is pretty much a curry-less curry.

Moussaka

You really should change the beef to lamb-only about 5 bucks a pound and the flavor change is worth it. Adding the extra garlic is a good choice too... A really fun edit to this dish is to slice the egg plant the short way so you get disks of the vegetable and then compile the whole dish in extra-big muffin tins. Two tins of 6 cups each uses the all the ingredients perfectly, fill all the way to the top with the bachemel and bake for about 40 minutes at same temp. REALLY great for dinner parties.

Greek Salad IV

This is the only traditional Greek salad on this site. I hate it when you are instructed to add in a million different things. Greek salad is SIMPLE...Oregano and a little mint MAYBE tops it off.

Honey Oat Muffins

I made these muffins for a tech rehearsal and everyone liked them. I didn't add the raisins, I only put in the walnuts. some of them I put walnuts and chocolate chips. I added a tiny bit more milk to keep them from getting dry, and added a teaspoon of cinnamon. I'll make them again with apples, I think.

Green Olive Chicken I

I don't know what I did wrong here. It was simply awful. It turned out to be a very thin potato soup with chicken and green olive floating in it. I added flour to thicken, but it just wasn't good. I would probably take the olives out completely, add salt, and have a broth based potato and chicken soup instead.

Exquisite Yeastless Focaccia

Very different from yeast-made focaccia, I'd hardly even call it that. But still really good! I made some changes to the spices because I read the reviews that there was too much pepper. I changed the measurement to 1/4 teaspoon and it was STILL too much. I'll add less next time. Instead of garlic salt, I used garlic powder and onion powder, actually a good teaspoon of both, and then I sprinkled the top with coarse sea salt. It was super. I wonder if it keeps, though?
