Angela's Awesome Enchiladas

Very good! I made a lower fat version by using non-fat sour cream and reduced fat cream of chicken soup. Also, I added some salsa, extra lime juice, and garlic powder to the soup/sour cream mixture. I like mine extra saucy so I also made sure to double the soup/sour cream mixture. Yum!

Oven Fried Lemonade Chicken

I thought it was really good! Had a sweet lemony flavor. I think it's best to pound the chicken thin so that it cooks more evenly. If any parts get burned it can leave a really funny taste

Tacos in Pasta Shells

Really liked this one! Instead of tossing the shells in butter though, I used lime juice. Gave it a nice flavor and was healthier. I used ground turkey and also opted for a packet of taco seasoning instead of the chili powder. I mixed some cilantro into the meat mixture as well.

Buffalo Chicken Cheese Dip with Wonder Bread Fingers

I LOVE Buffalo Chicken Dip, but I can tell this might not be the best way to go about. Using toasted bread for dipping seems like it'd be too mushy. Tortilla chips work best. I like using ranch in place of sour cream and shredding two cooked chicken breasts instead of canned chicken.

Beans, Greens and Garlic Soup

Really a good soup if you season it well. IF you use ORZO, DO NOT use a full cup. I made it with a full cup and when I put it in the refridgerator overnight, the orzo soaked up ALL of the broth and all I had left was orzo and beans no broth at all. I would say 1/2 cup would be fine but definitely NOT a full cup!!

Chicken Caesar Pasta

I actually used this recipe as a base for a pasta salad. After cooking the pasta I rinsed it under cold water. I added a diced tomato, coarsely chopped broccoli, and canned peas. I mixed in the dressing, red wine vinegar,parmasean cheese, and seasoned with salt and pepper. I left out the chicken and the lettuce. After chilling for a few hours, I took it to a BBQ and there was only about a spoonful left by the end of the day! It turned out great! It does make quite a bit though!

Cheesy Ranch Potato Bake

I got TONS of compliments the two times that I've made this dish. Didn't have chili powder, so I improvised with seasoned salt, pepper, paprika, cajun seasoning, and garlic powder. Then I roasted the potatoes on a baking sheet to crisp them a bit. Next, mixed in the ranch, cheese, chopped green onions, and bacon (used salad topper for time saving). SO good! Didn't even use the butter the second time and it was just as tasty

This is a deconstructed version of a dish my mom used to make. Pretty easy though, and makes good leftovers. I did double the sauce though so that it wouldn't be dry.

Simple Sweet and Spicy Chicken Wraps

Very tasty! First though, I cut out a lot of fat by subbing Greek yogurt for the mayonnaise. Didn't have cucumbers, but I did have broccoli so I used that. I also added some red bell pepper, red onion, and a half can of white kidney beans that I had on hand to the chicken and it turned out VERY delish.

Pumpkin Casserole

Holy smokes this is delicious! I pooled some suggestions and used the all purpose flour/baking soda combo, plus subbed the butter for 1/4c each of applesauce and canola oil. I also added extra nutmeg and cinnamon. It turned out really well, especially when I topped it with some fat free cool whip. Very easy and VERY good!

These are REALLY good, I love them! They are especially good if you use almond extract in place of vanilla. I never use the cinnamon candies either, but when I take them to a potluck this year, I may try using the nonpareils as another reader suggested

Baked Buffalo Wings

VERY tasty! I was surprised by how crispy they got. They can get a little greasy though, so I would recommend going light on the butter. I actually used olive oil to brush on mine and they still turned out great.

Monterey Chicken with Potatoes

This was pretty good, but I had to do ALOT of modifying. The potatoes were practically raw after the short time in the oven, so I ended up cooking those for much longer then was stated. I marinated the chicken in lime juice and a mexican chili marinade to give it some flavor. I also seasoned the potatoes ahead of time with seasoned salt, pepper, garlic powder, lime juice, cilantro and red pepper flakes to give them some flavor. Overall, a good base recipe
