Spinach Tomato Tortellini

Vicki's Hush Puppies

They lived up to their name! :-) AND they were easy! I only needed two chops for my husband and I so I chopped a a few small potatoes and put them right in the skillet. They were cooked perfectly and the flavor was great. I loved putting these things in the pan and practically leaving it alone until done. Then I just steamed some broccoli quickly after taking the lid off the skillet. GREAT, easy meal :-)

Mediterranean Pasta

I was so excited to try this but it just didn't live up to my expectations. I almost think it would be better as a vegetarian dish and just leave out the chicken and bacon. I also think I'll give the tomatoes a quick pulse with the immersion blender next time.

Baked Potato Skins

These were SO good. The spiced oil that is brushed on just makes all the difference. I just have one issue...8 servings?? Who can eat just ONE potatoe skin! :-)

Black-Eyed Pea Gumbo

This is comfort food to me! YUMMY! I didn't add any extra spices and the flavor was great. I forgot to make cornbread and was anxious to eat so I'll have to do that next time because I WILL be making this again and again.

Tiramisu Cheesecake

This was yummy and easy! I make a lot of cheesecakes and this is one of the easiest I've made. I used the amount of Kahlua that the recipe called for and it was enough Kahlua flavor that I thought the cheesecake should be called Kahlua rather than Tiramisu. I'm thinking of saving money by not adding the mascarpone next time as I didn't notice that it added anything to the flavor. Just a note: I could not find 12oz pkg of ladyfingers so I picked up two 3oz packages in the deli and left them out the dry out so they could be crushed up. the 6oz was plenty.

Sweetened Condensed Milk

I wanted to make Peanut Butter Blossoms and had no SCM...in the middle of a snow storm so no way to make it to the store. I was so excited to find this recipe! So easy! I don't have a blender so I used my immersion blender and the cookies turned out great! :-)

I did not care for this. I'm sure it would vary greatly depending on what sauces you used...but I didn't scrimp on quality and was still not impressed. I won't be making this again.

Southwestern Egg Rolls

These were easier to make than I first thought when I saw the list of ingredients. I decided against deep frying and instead sprayed them with Pam and cooked them at 425 for 15 minutes (as suggested by reviewers). They were very crispy. I think they tasted even better the next day. Maybe next time I'll let the ingredients rest together for a while before making the rolls to allow the flavors to marry.

Sally's Spinach Mashed Potatoes

YUMMMMM-EE! This recipe combined so many of my favorite things...mashed potatoes, spinach, CHEESE and sour cream! They were easy to boot. I used fresh spinach because that's what I had - nuke in the micro for a few and ready to add. This is a definite keeper!

Slow Cooker Buffalo Chicken Sandwiches

I fixed this according to directions except I thawed the chicken and only needed to cook it for about 6 hours. It was SO good, SO easy and the house smelled like buffalo wings! I used the extra sauce in the pot to drizzle on my sandwich and served with bleu cheese or ranch dressing.

Spinach and Orzo Salad

Sweet Restaurant Slaw

This was DELICIOUS!...and I'm not a fan of most cole slaws. I'm not sure why some reviewers are saying it's too sweet...after all, it's called SWEET slaw! Just the way I like it!! I followed the recipe exactly except I didn't have store-bought slaw mix...I had a small head of cabbage I wanted to use up and grated some carrots in too...now I had slaw mix. I also used Miracle Whip...not sure why you wouldn't...mayo has a completely different flavor (not as good in my opinion). So, GREAT recipe just as written! I will make this again and again :-)

White Cheese Chicken Lasagna

SOOOOO DELICIOUS! My husband went on and on about it! I will say that it was a good bit of work (but homeade lasgna usually is) and not something I'll be making every week...but so good that I know I will make it again! :-)
