Marinated Grilled Shrimp

Reviewed: Dec. 25, 2008
I made it for a Christmas Eve appetizer and we all thought it was O.K. but not great. The marinade tasted very similar to Catalina salad dressing except for the garlic. I think I'll try that next time. That'll not only make it quicker and easier but I can use as much of it as I would like for the marinade and still have some left for salad.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Mar. 6, 2009
I don't use salt so I left it out.I also used all the rub on one 6 lb. chicken. It was a very flavorful chicken and the leftovers made a great chicken salad. We don't care for the dark meat as much so next time I'll use the rub recipe for bone-in chicken breasts instead.

Italian Sausage Soup with Tortellini

Reviewed: Oct. 18, 2009
Made it just as the recipe states. It was excellent the first time around. However the leftovers had an overwhelming cheese tortellini flavor. The next time I make it , I'll cook the tortellini seperately and add as needed to each bowl of soup. Definitely worth trying.

Hoagie Dip

Reviewed: Jan. 3, 2010
Not everyone eats their hoagie the same way, so even though I tweaked this recipe I still gave it 5 stars. I had the grocer chip the meat so it was very easy to pull apart instead of slicing. Used Provolne, a little extra onion and red pepper hoagie spread. I put the shredded lettuce on top instead and sprinkled it with a little chopped tomatoe and mild banana pepper slices. I served it on french bread slices. I made only half of the recipe and it was still a lot of dip. My family loved it. It's definitely a keeper .

Salsa Cube Steaks

Reviewed: Jan. 3, 2010
The next time I make this I'll use the thickest salsa I can find and/or drain off some of the salsa juice. The meat cooks fast so be careful to not overcook it like me. For me it's only 4 stars but my son would give it a 5. I will make it again.

Slow Cooker Cassoulet

Reviewed: Mar. 14, 2010
We thought it was much too salty but the smokey flavor was really nice. Never had cannellini beans before. They were really good. Will need to find other recipes to use them in. Thank you for that.

Pasta Lasagna

Reviewed: Mar. 30, 2010
We thought it tasted bland. Next time I would use mild Italian sausage instead. Also some garlic, hot pepper flakes, and basil. I also wouldn't bother layering it. Just mix it all up and top with the remaining mozzerella. I'll definitely make it, my way, again. As always, it boils down to personal preference...

4 stars only because I substituted in the recipe. I used Good Seasons Italian salad dressing instead. It was excellent and the recipe is definitely a keeeper.

Roast Beef Horseradish Roll-Ups

Reviewed: Mar. 10, 2011
4 stars only because I altered the recipe.I used horseradish sauce and iceburg lettuce because that's what I had on hand. I made some with swiss and some with cheddar. Also had sliced red onion and sliced green peppers available. My family loved them.I cut them in half and we ate them right away without chilling them first.Definitely a keeper.

Chicken Piccata

Reviewed: Mar. 10, 2011
Both times I've made this, I used chicken cutlets and adjusted the cooking time. Used cooking white wine so I left out the salt. This recpie is quick, easy and very tasteful! You'll love it! Serve it with some salad/veggie and bread of your choosing. We like our bread with fresh made pesto in the summer.

Delicious Ham and Potato Soup

Reviewed: Oct. 30, 2011
For personal preference, I deleted the salt and made as written. For us, it was still too salty, but I'm not going to ding the recipe for that. It's a very good soup, easy, and fast. Next time, using a can of low sodium broth and only 1 1/2 cups of water ( still deleting the salt) should be perfect. I'm definitely keeping this recipe.

Didn't have hot chili paste so I used red pepper flakes instead. Excellent recipe and will definitely be adding it to my meal roration. Will double the marinade ingredients next time to yield more sauce to put over jasmine rice.

Aunt Jules' Balsalmic Chicken with Peppers

Reviewed: Jun. 17, 2012
Have made this multiple times. Excellent. I triple the balsamic and brown sugar to make extra sauce. You will have to cook it longer though for it to reduce. I serve jasmine rice with it.

BLT Pasta Salad

Reviewed: Jun. 25, 2012
I made it the nite before and didn't want the onions to pick up that funky sulfer taste so I used green onions. Used Bacon Ranch dressing. It got dry overnite so added some extra regular ranch. I thought it was just O.K., but the rest of my family loved it. I felt like it was missing something... I will make it again for them but not myself or other company.
