Cincinnati Chili I

This was really good! My husband was craving the Skyline Chili we had in Cincinnati and this was just as good! I did as other reviews suggested and cooked the raw meat (95% lean) in the beef stock to break it down more. Also kept onions raw to add as a topping. Definite keeper and sure to be crowd pleaser!

The Best Vegetarian Chili in the World

This was very good! Made a few changes - 1 Tbsp oregano instead of 2, and 1 Tsp of salt, not 1 Tbsp (and it could do with even a little less), no jalapenos, used golden hominy instead of reg corn, and used 1 pkg sausage crumbles and 1 regular crumbles. My kids loved it! I'm sure the recipe "as is" is great too - just not all that salt!

Extreme Banana Nut Bread 'EBNB'

This bread is really good! Eating a piece fresh from the oven as I write this. I made according to the recipe, but used pure cane sugar and oil (how did I run out of brown sugar and butter!?) ; also added some vanilla. Next time will try with brown sugar and butter...how can that not be good? :) Definitely a keeper! i've tried several banana bread recipes from this site and others, and this one is closest to the perfect bread I've been looking for.

Radish Cucumber Salad

I made this basically according to the recipe, just didn't have lemon-pepper on hand, so used only pepper. It was light and refreshing...a good use for the radishes and cucumber I had in the fridge!

Brussels Sprouts Gratin

Made this for Easter and was very happy with how it turned out! I tried it because I had made a zucchini gratin by Ina Garten that was delicious and thought this sounded equally good. I did make a few changes, but think the recipe would be good as is too. I sauteed frozen brussels sprouts in butter, then added some salt, pepper and a dash of nutmeg, then the cream. I put the bacon, bread crumbs and parmesan on top. Will definitely make again!

Antipasto Pasta Salad

I made this 3x in one week to test it for my daughter's bday party. Each time, it got a lot of compliments. Last time was the best and I doubled the pasta, but not the dressing, used fresh mozzarella and fresh parsley instead of asiago and dried herbs. Also found that making it the day before was key.

Brooke's Best Bombshell Brownies

Made these twice in two days! First time as directed and second time substituting 1 cup dark brown sugar for one of the cups of white sugar. I think the second batch was better, but both were delish. Also used combo of peanut butter chips and chocolate chips in the second batch. Yummy!

Sunday Best Fruit Salad

This was a nice fruit salad, but a little too much sliminess for my taste. I would use more fresh fruit the next time and less pie filling or something else to coat the fruit -maybe honey or something. Apples and bananas did stay nice and white after the soak in lemon juice.

Farmer's Strata

Made this for Christmas morning. Assembled the night before and stuck it in the fridge. It was so easy to just put in the oven in the morning. Timing was correct for mine. It was really tasty and our guests were impressed!

Super-Delicious Zuppa Toscana

This was a delicious soup. I made it according to recipe, but left out the red pepper - used 1/2 mild and 1/2 hot sausage instead and kale rather than spinach. I brought it to a Christmas Eve soup dinner and everyone loved it! I will make it again.

Winter Fruit Salad with Lemon Poppyseed Dressing

This is such a good salad. Very light and refreshing flavor. I love it with the cashews. Not a big fan of swiss, so I used shredded mozzarella instead and it was really good.

Apricot Brisket

This was really yummy! Followed directions with no changes and it came out great. The apricots melt into the onion soup mix and drippings making a delicious gravy. Very much comfort food!

Iced Pumpkin Cookies

These are delicious. I made with freshly roasted pie pumpkin and the flavor is nice and subtle (would probably just go for the can next time!). Also used the glaze recipe from another pumpkin cookie - caramel glaze just sounded so good. Have a feeling these will be gone soon and I'll have to make more.

Slow Cooker Carnitas

This turned out really great! Did make a few changes. I followed another reviewer's advice and doubled the spices, leaving out cinnamon (don't double the salt!). I also braised in the oven on 325 for about 3 hours instead of doing it in the crockpot. Spreading on a cookie sheet after and baking at 400 for about 15-20 minutes was really worth it - crisp outside, tender inside. Served with corn tortillas, cilantro, salsa, guacamole, cheese, whatever...they were yummy!
