Tina's Halloween Quesadillas

I made these last night to use up left over mashed sweet potatoes and they were so good. Even my husband who isn't a bean person liked them. I used regular tortillas as it was what I had on hand and instead of salsa I served them with sour cream

Upside Down

I did this with brown rice and frozen cauliflower and it came out really nice. With the brown rice you need a bit more water and the cook time is longer.

Moist Holiday Honeycake

This cake was perfect! I am not usually a fan of honey cakes because I find them dry and rather flavorless but this cake was so moist but still light and tasted incredible. I had my guests fighting over the last piece.

Honey Roasted Red Potatoes

These were a big hit at my dinner the other night. The only word of advice I will give is really make sure the potatoes are in one layer or you will have very crispy unflavored potatoes a the top and very flavorful ones at the bottom. I mixed them up and reheated them and the flavor got more equally distributed the second time.

Strawberry Bread II

They came out very good with a few adjustments to the recipe. First I used fresh strawberries that had frozen because my fridge was too cold. To create strawberry juice I added a tablespoon of sugar and 1/4 cup of hot water to the strawberries and mixed it up a bit and poured that into the mixture. I also used rum extract instead of almond because that is what I had in the house. In the end I found the strawberry mixture to be to dry so I added 1/4 cup orange juice. They ended up coming out super moist and delicious. I made them in cupcake tins and found they only needed about 20 minutes but every oven is different.

Mouth-Watering Strawberry and Chocolate Chip Brownies

I ended up using fresh strawberries that had gotten frozen in my fridge when the temperature was too high. I also left out the chocolate chips because I am not a fan of crunchy things in my brownies, I never put walnuts in them either. Also as it wasn't passover I put 1 cup regular flour. They made the house smell really nice and tasted really good. I did make a double recipe and cooked it in one large pan and they came out all right but needed to cook for an hour instead of 45 minutes

This came out absolutely great! I put in half whole wheat and half white flour and it came out quite nice. I also don't have a bread machine so I kneaded by hand and left it to rise for an hour.

Turkish Red Lentil Soup with Mint

I loved this recipe, I had a cold and the cayenne pepper really cleared me up. I didn't have any tomato paste so i used some of the juice from the canned tomatoes and I used brown rice because I don't eat white rice. If you do use brown rice I would recommend using a bit more so it still resembles soup at the end of cooking. I have found that I need to add water to every reheat to give it a soup consistency again.

I baked these for passover when baking with flour is not really an option and they went before the day was out. I used ground almonds as I had those in the house and needed 2 and 1/4 cups of almonds to create a dough like consistency

Best Brownies

I really liked these. I think that the frosting is a must here! I am allergic to dairy so I used butter flavored margarine and under cooked them slightly to give them a more fudgey consistency. I made the frosting over a low flame with 2/3 cup of powdered sugar and 3 heaping TBSP of cocoa powder and it wasn't too sweet. I poured it over the warm brownies and it set pretty solid though still a bit soft. Having a dairy allergy its hard to get good chocolate but I would totally make these again.

Sicilian Lentil Pasta Sauce

I followed Christine M's directions and it was pretty good but I felt like it was missing something that I couldn't put my finger on. I served my husband's with Parmesan (I can't eat cheese) and he loved the sauce so maybe that was it. I used red lentils and cooked them for only 25 minutes because they were starting to stick to the bottom of the pan.

Pecan Pie

I actually really loved this recipe. I made a few changes based on the suggestions of others as well as a few of my own. First instead of buying an unbaked pie shell I bought frozen pastry dough that was slightly sweet and then cut the sugar down to 1 1/8 cups of which I did 5/8 brown sugar and a half cup of white. I also baked it in a tart pan so it was thin rather than the thick pecan pie you get with an unbaked pie shell and it was delicious. As it was thinner I only baked it for 40 minutes. Like others suggested I mixed the cold and cornstarch before I added it. I also left half of the pecans whole and I chopped half. I think next time I will sprinkle some cinnamon sugar over the top before I bake it. I think it could be interesting.

Orange Oatmeal Cookies

I think these were excellent. They were soft almost cakey. My husband took to calling them muffin tops because they were a little crunchy on the outside but like cake inside. I made a few changes to this recipe: 1. I used canola oil instead of butter because I never bake with butter for health reasons 2. I put raisins instead of nuts 3. I left out the orange zest because I didn't have an orange at hand only orange juice. Next time I would make it with the zest.

Oatmeal Lace Cookies

I loved it. After seeing how small 1/4 tsp worth of cookies were I exchanged it for a heaping 1/2 tsp. I also baked them on baking paper and they peeled off easily. I am officially addicted.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

I followed the recipe exactly but in the end i had a dry cookie inside a decent tasting cupcake. Its entirely possible that I did something wrong but I wouldn't make them again.
