Classic Pecan Pie

I changed a lot and in this recipe based on the comments of others and it was very good but I obviously can't give it 5 stars because I varied too much from the recipe. I honestly couldn't even rate the original recipe. I toasted the pecans. I used brown sugar and cut the amount in half. I substituted the vanilla for 1/4 cup bourbon. Next time I will add more pecans as my husband said it was still a bit sweet and I thought the filling was a bit loose.

Easy Morning Glory Muffins

I read all the suggestions and opted to try a few. I used 100% whole wheat flour. Used raw sugar and cut it down to 1/2 cup and used 1/4 cup silan. 3 Carrots, a banana, 1/2 cup oil, half cup yogurt, sun flower seeds, sesame seeds, flax seeds, sesame seeds - a hand full of each. Its really such a versile recipe that the base allows for a lot of creativity. They rose nicely with no heaviness. Great with peanut butter ( though that may be a preggo thing).

Chef John's Chocolate Mint Brownies

This is now my go to brownie recipe, its easy and really fudgey and good. I tend to mix up the icing flavors every once in a while, instead of mint extract I have used whisky, lemon and most recently a mint flavoured ganache frosting. Extremely versatile and always a hit. Per usual I substitute the butter for canola oil.

Best Chocolate Chip Cookies

I made these swapping butter for canola oil because I don't bake with butter and adding a bit more salt (I like my sweet mixed with salty) and they were incredible, just as the description states, crispy edges and chewy middles.

Suki's Spinach and Feta Pasta

I liked this. It wasn't one of my favourites but it was very tasty. Based on some comments that it lacked flavor I added 3 additional cloves of garlic and a chile pepper instead of pepper flakes.

Jalapeno Lentil Burgers

They were great, I used red lentils because the recipe didn't specify. I made rice to go with it but I think it needed a vegetable more so next time i will do that. The recipe says feeds 6 but it was only enough for 3 servings.

Peanut Noodles

I made the mistake of using natural peanut butter so it was a bit bland, as I also cut back the soy sauce as some people suggested. I added a bit of teriyaki sauce which brought it some more sweetness and saltiness which improved the tasted greatly. I liked it much better cold than hot. I threw some broccoli and mushrooms into the mix to make it feel more like a meal and it worked very well.

This has become a regular staple at my dinner table when I have company. Its very easy and a crowd pleaser every time. Sometimes I leave out the butter and just toast the almonds in a frying pan and its still very nice.

Gramma Momo's WW Pancakes

This was a great recipe. My dough ended up being a little thick so i had to add 1/4 cup more milk after which it was pourable. The pancakes themselves were pretty filling, we ate them for dinner and I could only have two pancakes using a 1/4 cup measuring scoop to pour and my husband had 5. I took Sarah Jo's suggestion of adding more baking powder, I added an additional 1/2 tsp of both baking powder and baking soda and they were super thick and fluffy. If you don't like thick I would advise against increasing the raising agents that much. It was a bit on the sweet side and I would probably reduce the sugar to 1/3 or 1/4 cup next time. I put in strawberries but it was too sweet with all the sugar to put in the chocolate chips I normally throw into pancakes or even to serve with syrup.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

I followed the recipe exactly but in the end i had a dry cookie inside a decent tasting cupcake. Its entirely possible that I did something wrong but I wouldn't make them again.

Oatmeal Lace Cookies

I loved it. After seeing how small 1/4 tsp worth of cookies were I exchanged it for a heaping 1/2 tsp. I also baked them on baking paper and they peeled off easily. I am officially addicted.

Orange Oatmeal Cookies

I think these were excellent. They were soft almost cakey. My husband took to calling them muffin tops because they were a little crunchy on the outside but like cake inside. I made a few changes to this recipe: 1. I used canola oil instead of butter because I never bake with butter for health reasons 2. I put raisins instead of nuts 3. I left out the orange zest because I didn't have an orange at hand only orange juice. Next time I would make it with the zest.

Pecan Pie

I actually really loved this recipe. I made a few changes based on the suggestions of others as well as a few of my own. First instead of buying an unbaked pie shell I bought frozen pastry dough that was slightly sweet and then cut the sugar down to 1 1/8 cups of which I did 5/8 brown sugar and a half cup of white. I also baked it in a tart pan so it was thin rather than the thick pecan pie you get with an unbaked pie shell and it was delicious. As it was thinner I only baked it for 40 minutes. Like others suggested I mixed the cold and cornstarch before I added it. I also left half of the pecans whole and I chopped half. I think next time I will sprinkle some cinnamon sugar over the top before I bake it. I think it could be interesting.

Sicilian Lentil Pasta Sauce

I followed Christine M's directions and it was pretty good but I felt like it was missing something that I couldn't put my finger on. I served my husband's with Parmesan (I can't eat cheese) and he loved the sauce so maybe that was it. I used red lentils and cooked them for only 25 minutes because they were starting to stick to the bottom of the pan.

Best Brownies

I really liked these. I think that the frosting is a must here! I am allergic to dairy so I used butter flavored margarine and under cooked them slightly to give them a more fudgey consistency. I made the frosting over a low flame with 2/3 cup of powdered sugar and 3 heaping TBSP of cocoa powder and it wasn't too sweet. I poured it over the warm brownies and it set pretty solid though still a bit soft. Having a dairy allergy its hard to get good chocolate but I would totally make these again.
