Whole Wheat Blueberry Pancakes

These were good. I added a little bit of vanilla extract, because that's how my mom always made pancakes. We used these without fruit, just because we didn't have any. I also definitely needed more milk. Probably close to a 1/4 or 1/3 of a cup more.

Lentils with Chorizo

Another recipe that I changed a lot, but the concept is good, so I'll give it 3 stars. Chorizo and lentils really work well together, so this is how I did it. First off, I didn't use bacon. The oil from the chorizo seemed like enough and I was right. I also think bacon would have just tasted strange in this recipe. I couldn't find tomatillo (unfortunately, because I think that would have been a nice addition), so I just used a can of crushed tomatoes. I omitted the water because crushed tomatoes are liquidy enough. Blended everything as suggested, cooked lentils as suggested, and then mixed it all together. Next time I will use more chorizo, since all you really got was the flavor of chorizo, not the texture.

Chicken Breasts with Balsamic Vinegar and Garlic

This was very delicious! I'm not eating any flour at the moment (or probably ever again), so I totally cut it out of the dish and it was absolutely perfect. Followed the suggestion of another user and turned the pan up really high and browned each side of the chicken, then I turned it down to low to cook the garlic and mushrooms. Worked like a charm. The chicken got a little dry, so next time I will more carefully monitor it, to make sure it doesn't go above 170 degrees cooking. After we ate the dinner, my boyfriend had the brilliant idea of saving the left over sauce, thickened with a little cornstarch and using it on caprese salad. I had a bite and it was delicious!

Beef Bulgogi

This is the first time I've given a recipe 5 stars on this website. BF didn't change a thing and it came out absolutely amazing. It's delicious and tastes just like bulgogi I've had in Korean restaurants and at dinner in a Korean home. Had it with a side salad, steamed rice, fried egg and fermented red bean paste. Perfect dinner!

Addictive Sweet Potato Burritos

Yum!! I don't know what I thought, but I never thought these would taste as good as they do. I changed the recipe a little, just to fit what I had in the pantry. Mashed up some kidney beans, because I only had one sweet potato. Then added whole black beans. Running low on the spices I needed, so I just added my favorite hot sauce. Haven't baked these up yet, but the one I tasted was so delicious! EDIT: After looking at this recipe again, I'm a little confused by the portions that the recipe calls for. I guess I only made 8 burritos, but I used one can of white kidney beans, mashed, and one can of black beans, whole. Plus ONE large sweet potato, which was about 1 1/2 cups. I'm not sure why you'd need so much filling as this was more than enough for 8 tortillas and I imagine could have filled 12. Still a fabulous recipe though!

Shrimp with Mustard Sauce

This was pretty good. Made the recipe almost as is and I enjoyed it, but I'm not sure it was really anything to write home about it. I made it because I had all the ingredients and needed a quick way to make shrimp. It did all of that, but I'm still not sure I would make it again. The shrimp and mustard combination was a little odd.

Chicken and Red Wine Sauce

This recipe is good, but I only gave it three stars because I had to change so much. I only added the brown sugar to taste, starting with a teaspoon. I only got about four teaspoons in before I decided it was enough. I also cooked pancetta with the garlic, which gave it a nice bacony flavor. If I made it again, I would definitely use less oil and remove some of the oil after cooking the pancetta, but that was my fault, not the recipe's. The paprika and red wine combination was delicious. I served it with red wine risotto and green beans. Yum!

Angela's Awesome Enchiladas

Really delicious! Only got four stars from me because it was on the salty side. Especially for my bf who likes things very light on the salt. Added cilantro and it made it deeeeelicious. I think I will make my own taco seasoning to cut down on the saltiness next time.
