Curried Chicken and Brown Rice Casserole

I love this recipe. Very easy to make, very tasty. And healthy! I only add a little more salt (ok, not so healthy). Very, very good.

Greek Lemon Chicken Soup

This was pretty awesome. My boys order this soup at every Greek restaurant we go to, and they agreed this was at least as good, if not better. Made this as the original recipe prescribed except for very minor tweaks: 1) I cooked the onion and celery in olive oil first; 2) I didn't use the flour/margarine for thickening as the soup didn't need it; 3) I used 8C water and 6TB chicken base; and 4) I only used six egg yolks. Delicious.

Chicken Kokkinisto with Orzo

Following some other reviews, I used a little white wine, chicken broth instead of water and I added 1/2 tsp or so of oregano (guessing... I used my hand not an actual tsp)... rave reviews from all sides. Thanks!

Amazingly Easy Irish Soda Bread

Very easy, very good. Not 100% like the stuff I'm used to at our friendly Irish pub, but pretty darn close. For ease of baking, I am all about this bread! followed directions exactly and it worked great. Next time, I will add raisins...

No-Fuss Chicken

Very easy, very tasty. I added about 1/2-3/4 tsp of black pepper. Also, I ended up using more butter than the recipe called for - my butter kept getting soaked up into the flour coating on the chicken. So my version may not be the healthiest, but my picky 12yr old had THREE helpings and that never happens... so this is a total keeper.

Baklava

Made this with my kids - super easy and fun to make. And tasted very authentic to us (we used to live in Greece). I had no idea it was so simple to make. I did make about 1.5x the syrup but everything else I made as directed. Will definitely make this again - this time we made it with pecans, but I look forward to experimenting with walnuts and pistachios.

Slow Cooker Chicken Stroganoff

A family favorite now. I was a little skeptical at first but the reviews were all good... I did what one reviewer suggested and added nonfat cream cheese instead of regular, then added 1/4-1/3 C of wine at the same time. I like the wine flavor and this was a big hit in my normally picky household. Thanks!

Greek Chicken

This was a huge hit with the kids and the spouse. Tangy, tasty. We marinated it overnight and the lemon juices practically cooked the chicken through, so we just popped on the grill for a few minutes for the finishing touch. Delicious!

Middle Eastern Rice with Black Beans and Chickpeas

I made this exactly as the recipe calls for except one thing - I took the advice of another reviewer and kept the parsley and cilantro to 2tblsp of each. It was very good and even my picky "I hate curry" husband loved it.

Pakistani Lentil Curry

I had to interrupt my work day and my lunch to rate this one - I am eating the leftovers for lunch today and this is by far the best lentil recipe I have ever made. I took the advice of some of the others - doubled the spices and added shredded carrots and bite-size potato chunks - and used the full amount of water, which was almost completely absorbed in the cooking. I skipped the final step of adding milk, but only because I forgot. DELICIOUS. Served it with flatbread and some crumbled feta the first night. Having it with wild rice today. Love it. Thank you!
