I'm back in school for culinary arts (both pastry and cooking) and absolutely love it.
My favorite things to cook
The thing I'm most known for cooking is baked goods but I love experimenting with all sorts of desserts. What I love to cook most is soup, I love coming up with different soup ideas but I never write them down so I rarely make the same thing twice.
My favorite family cooking traditions
At christmas my family always made their own homemade noodles for turkey & noodles. Holiday cookies are also a big thing and have now become my own tradition (experimenting with new cookie recipes and making up my own)
My cooking triumphs
My first wedding cake done for a friend at 22yrs old (3 tiered heartshaped carrotcake). My college acceptance for culinary arts:pastry. Having made my own wedding cake (keylime cream filling and cheesecake cream frosting).
My cooking tragedies
shrimp with mustard sauce.. very burned hard boiled eggs at 10yrs old. The nutmeg cheesecake that was supposed to be a sweetpotato cheesecake, oops.

Orange Cranberry Drops
I enjoyed the recipe but I added another 1/4 tsp of salt to pull out the flavors. Everything else stayed the same. I'm guessing the people who ended up with cakier cookies used a stand mixer or electric mixer because that happens when you overbeat the dough after adding the egg or they used a larger size than standard large egg (which is go to egg in baking).

Whipping Cream Pound Cake
Pros: Density, Texture, and Small Crumb are perfect for carving. Because of density it holds up things well ie: a perched Gumpaste/Fondant Plane perched nicely without indentation. Doesn't compress when fondant is placed on, no settling which can make pooches in your fondant. Cons: Flavor: leans on the eggy side which is fine for me because it's reminiscent of pastry cream but not to everyones taste. IMPORTANT: Definitely requires the addition of salt. I added 1/2 tsp of salt which did the trick. Recommendation's to improve flavoring..I used lemon extract instead of vanilla which made it resemble cheesecake flavoring. I would recommend other flavors that play well with egg like cream cheese flavored bakery emulsion, orange extract, chocolate extract.

Crazy Cake
This cake is great as is but if you decide to make it with Gluten Free Flour it comes out even better tasting, like a flourless cake so then its Egg Free, Dairy Free, and gluten free but tastes amazing.
