Stuffed Crown Roast of Pork

Stuffing was delicious I added craisons too! I cooked it seperately and then put it inside the crown roasst. That is what the butcher recommended and I am really glad I did. Internal temp of 175 is way over done. Take it out at 160 and let let sit. Perfect!

Easy Fried Eggplant

I salted my slices of eggplant for 30 minutes first and then rinsed and dried. I also floured before I did the egg wash and I used italian seasoned bread crumbs. If you follow this recipe exactly you are going to come out with some very bland eggplant no matter how much salt you add at the end. You also need to make sure your oil is hot before you add your eggplant and do not crowd the pan or you will end up with some soggy eggplant. It was good once I added some seasoning!

Puffy Dessert Omelet

This is a recipe my mom use to make as a treat for dinner. I LOVED it because what child wouldn't want dessert for dinner! We call it Omelet Stefanie after my mom and it brings back really fond memories. She would add whatever fresh fruit she had or even a can of fruit cocktail which was actually my favorite all sprinkled with lot's of powdered sugars. As an adult we started to add a splash of brandy to the fruit. DELICIOUS!

Easy Pavlova

I was kind of scared to make meringue but it was easy and delicious. I filled it with fresh whipped cream sweetened with a pinch of sugar and vanilla, and served it with strawberries on top of that. It was Beautiful!

Marinated Grilled Shrimp

I can't believe such simple ingredients can make such delicious shrimp! Always a big hit. I love to serve it as a starter at our BBQ's. Interesting thing happens: no matter how much I increase the amount of shrimp it is still gone in the same amount of time. It's magic!

Aunt Gail's Oatmeal Lace Cookies

Yummy! Followed the recipe except I did 1/2 cup white sugar 1/2 cup light brown sugar and I add Heath Bar toffee bits. I will definitely make these again! The first tray is already gone and the kids are hovering around the oven to eat the next tray.

Too Much Chocolate Cake

Strangely I though this cake was terrible. I have gone back again and again to see if I missed something but I don't think I did? I will try again but the part I really hated was the texture of the chocolate chips on the bottom of the cake....which was the top when you flipped it. Not sure what went wrong.

Cordon Bleu Chicken Rolls

LOVED IT! I am going to make this for company. One roll is a perfect serving. I have three kids who don't eat meat so I just put swiss in the center and made sure I folded in the edges and rolled. I think these were every bit as good as the ones I put ham in. I also seasoned the cornflake crumbs with seasoned salt. DELICIOUS!

Creamiest Rice Pudding

This is the best rice pudding recipe! I cut the recipe in half but used 2 eggs since I couldn't figure out how do add 1 and a 1/2 eggs. Texture is fabulous and very creamy. I love it. I am so glad I halved the recipe because 12 servings is a huge amount of pudding. I had made this once before and it was delicious but not very thick at all. I think the trick is you MUST use whole milk...not skim, not 2%, not 1%. Whole MILK Only. This time it is the perfect consistency.

Best cake I have ever made! I followed directions exactly, measured carefully and it came out moist light (but denser than a boxed cake) and delicious. My kids recognized right away this was no ordinary boxed cake. I was really proud of the cake it was beautiful!

Maria's Pepper Steak

Delicious! I added a tbsp. of brown sugar because I didn't have enough honey. I also had about 2 lbs of steak so I did a 1/2 cup soy, 1/2 cup honey/brown sugar blend and 1/2 cup red wine vinegar...for such simple ingredients it was VERY flavorful! I browned the peppers and onions and then browned the marinated steak strips before adding the rest of the marinade. I don't think it would be nearly as good if the meat was essentially boiled in the liquids. Brown everything first. Served it over rice but I think I might serve it over Lomein Noodles next time.

My Crab Cakes

Loved it and so did my family! The only thing I changed was I added a 1/4 cup of finely chopped red and green pepper that I sauteed with the green onion because I think everything looks more appetizing with a little color. The panko bread crumbs were perfect for a crisp coating on the outside. YUM!

Sugar Cookie Icing

Best icing ever! Everytime I mixed a new color I tried a new flavor. We did almond extract, vanilla extra, and lemon extract. Lemon by far was my favorite. That little touch of citrus just did it for me.
