Watermelon, Almond, Feta and Mint Salad

No Fail Pie Crust II

Made Blackberry pie with a double crust for my co-workers. I followed the recipe exactly, but cut the recipe in half...took two balls and flattened them in plastic wrap, and chilled them for a while, then rolled them out on a pastry cloth with rolling pin covered with cloth. No problems whatsoever. I got so many compliments on the crust. I will use this recipe often.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This is a very unique and unusual recipe. The main reason I chose it was the ingredients ~ a very healthy soup. It is rather thick, but the taste is good. I will probably make it again.

Fruit Salad

I have made this per the recipe and really enjoyed the fact that it was not too sweet. I used fruit w/o sweetened syrup, and half pkg of marshmallows. If you use the low-fat or fat free scour cream, it is a fairly healthy salad. I have added pecans and toasted coconut on occasion just to change it a bit. Its quick to prepare.

Amazing Pecan Coffee Cake

It IS amazing! I did double the topping. I had a hard time trying to remove the cake from the pan. It seemed it would break apart, so I just left it in the pan. I ate some while warm and it was yummy. Took the rest to work for co-workers, and it is still wonderful cold.

Rhubarb Cherry Crisp

Perfect combination of sweet and tart, and simple recipe. I used fresh picked rhubarb, and local strawberries, then served it hot with ice cream.

Basic Flaky Pie Crust

I have used the same recipe for baking pies for over 35 years. I never have complaints. It is easily adaptable for all types of fillings, and the recipe can be doubled without problems. I prefer pastry cloths for rolling. I occasionally use butter in place of butter-flavored Crisco, with the same good results. Chilled ingredients do help.This is a good, dependable recipe for beginners and beyond.

Pumpkin Spice Cupcakes

(Pardon me while I lick my fingers!) OK...changed slightly based on recommendation to oil, additional pumpkin, and extra spice. These are wonderful! Very good flavor and moist texture. My boss-lady is gonna love these for her birthday!

Spiced Pot Roast

My German boyfriend thought this was delicious. I used a chuck roast, and when done, took it out, shredded it, then added it back to the broth. I enjoyed the leftovers when the sauce had intensely flavored the meat. No changes necessary. Served it with sauteed cabbage. Great comfort meal.

Flounder Mediterranean

This was a big hit. I used canned tomatoes as recommended because fresh are out-of-season, with fresh basil, and a good quality Parmesan-Rigganno. I didn't cook the flounder with the sauce, but ladled it over the fish after baking. The sauce is awesome and needed no adjustments.

Hot Buttered Rum Batter

Stewed Cabbage

This was wonderful. I just happened to have some Benton's bacon from breakfast already prepared, so I used about 3 tablespoons of the drippings with 1 tablespoon butter. My guests asked for the recipe ~ a good sign. Served it with "Best Ever Brisket" and "Easy Polenta With Tomato Sauce". All Recipes is my go-to source these days!
