Eggnog Cookies I

I liked these, as did my husband (who is not a fan of egg-nogg). Per posted reviews I both increased the nutmeg in the recipe, and sprinkled the tops of the cookies. I also added about 1/2 tsp cloves. It took me a batch or two to nail down when to take them out (on stone cookie sheet they took considerably longer suggested). Make them small - they spread quite a bit.

Oven-Roasted Asparagus

Butternut Squash Soup II

Just made this soup today and even with no salt and pepper it is delicious. Amazingly sweet for having no sugar in it. I will be adding some salt an pepper to give it more dimension but the thickness and natural flavor are wonderful!

Slow-Cooked Pulled Pork Shoulder

Definitely going to use this one again. I don't have THAT much vinegar on hand so I ended up using about equal portions of white and cider vinegar with a touch of white wine vinegar just to have enough to mostly cover the meat. I also didn't have ground mustard on hand - so I used whole mustard seeds. Might be missing something (will have to see next time), but it still turned out really nicely with a lovely tangy taste to it.

Chocolate Zucchini Cake I

Not too sweet, and the PERFECT texture. If I make it again I think I'd add just a hint more cocoa as it was a little on the bland side, but the fantastic moist texture made up for that.

Mama's Potato Salad

Good but as at least one other reviewer mentioned, the horseradish doesn't provide quite the kick that you might hope for. I'll probably use this recipe again, but amp up the horseradish, and probably either use spicy mustard or amp up the horseradish a bit. :)

Mushroom Chicken Piccata

I like this one ... I haven't had much luck with breaded meats previously, but this one stuck well and colored nicely. The flavor was good, and the mushrooms came out really well. Next time I will add some more seasoning into the flour mixture as the chicken itself was a bit bland.

No Bake Sugar Free Cheese Cake

While not completely sugar free (unless there is such a thing as sugar free frozen whipped topping that I just couldn't find), I like this one. I used strawberry sugar free Jello instead of lemon. I also blended fresh strawberries into the whipped topping and re-froze it before folding it into the cream cheese and jello mixture. I cooled the jello a little too much so the texture didn't come out quite right, but the flavor was fresh and tangy. I'll make it again, but next time I'll be more careful about the jello, and I'll also cut back the butter and graham cracker a little next time for a little thinner crust.

Turkey with Apple Stuffing

Used the stuffing part of this recipe on Thanksgiving with a few alterations ... skipped the almonds, used dried cranberries instead of raisings, and downsized the recipe for a 12 lb turkey (3/4 full recipe). It went over very well, but if I use it again I'd actually downsize it a bit further as it wasn't so great as leftovers.

Hungarian Mushroom Soup

Loved this recipe - too spicy for my clan and we ended up using quite a bit of sour cream to back of the burn, but the flavor was fantastic - I'd just cut down the spicey stuff next time around.

Hot Spiced Cider

This tasted great, but I don't think the sugar was really necessary, and cleaning out the coffee pot afterwards is quite a task. I'll probably make this again next fall or winter, but without the sugar, and might try it in the crock pot.

This was a big hit at Christmas dinner. I did modify it a bit per some suggestions and also because I thought the amount of lemon juice and oil seemed excessive. I eyeballed it and put about 1 cup of lemon juice and about 1/2 cup oil into the dressing. Also because the dressing is so tart the onion seemed like overkill - so instead I added a can of whole black olives.

Cream Cheese Kolacky

I've made these a couple times and they go over well. Flavor is good and they aren't overly sweet. It is a little frustrating that they don't stay closed up. Last time I used another reviewers suggestion to cut circles and drop them in a mini muffin pan - they cook well and come out looking cute and almost like flowers, but you have to be very careful not to use too much jam or the overflow and make a mess.

Candy Cane Cookies III

These turned out beautifully, but I had a couple issues with the directions. As someone else commented, the sugar/candy can mix doesn't stick well ... I smeared it on which worked OK but was really messy ... I might try spritzing them with something kinda stick and sprinkling next time. Also ... I played with the size and thickness of the 'ropes' a lot. The cutest ones had pretty narrow short ropes.

Crunchy Potato Salad

I forgot the red pepper and just sprinkled it on top when serving. As someone else mentioned this was best right after putting it together ... I'm not sure if that's because the flavors all mixed together or if this particular recipe is just better warm, but it wasn't as good once it had cooled and set a while.
