Cinnamon, Spice and Everything Nice Cookies

I was looking for a cookie recipe that would use the cinnamon chips I picked up on a whim. I'm not really a molasses cookie fan but picked this one because all the other spices sounded like they would make a good cookie (and it has a lot of good reviews). I used regular molasses as I didn't have any light molasses, and used butter instead of shortening. I also ended up adding just a touch more flour as the dough did not seem 'stiff' as the recipe says it should be. I did have a little trouble with the tops not cracking on the first couple batches. Next time I'll use a little more flour and and a touch more soda and maybe let the dough sit just for a little while before baking them. Regardless these got rave reviews at the office Christmas cookie exchange.

Good for what it is but it is very sweet and I was really looking for something a little more like oatmeal crisp and this is more apple crisp plus cranberry.

Sweet Potato Rosti

To be fair I don't particularly like sweet potatoes. Might try these again later as the winter CSA we are in is likely to give me ample more sweet potatoes. These did get a little burnt at the posted time so I'd either drop the temp a touch or cook them a minute or two less. Second ... I didn't realize when I grabbed goat cheese at the store that the standard pack was less than listed - and the cake itself was pretty bland so it needs every bit of the tangy melty goat cheese and some additionaly seasoning too ... maybe garlic salt.

Good but a little too sweet. I will probably make it again but will cut back on the sugar and will cook and skin the potatoes earlier as that was rather time consuming.

Butternut Squash Soup II

Just made this soup today and even with no salt and pepper it is delicious. Amazingly sweet for having no sugar in it. I will be adding some salt an pepper to give it more dimension but the thickness and natural flavor are wonderful!

Cream Cheese Kolacky

I've made these a couple times and they go over well. Flavor is good and they aren't overly sweet. It is a little frustrating that they don't stay closed up. Last time I used another reviewers suggestion to cut circles and drop them in a mini muffin pan - they cook well and come out looking cute and almost like flowers, but you have to be very careful not to use too much jam or the overflow and make a mess.

Slow-Cooked Pulled Pork Shoulder

Definitely going to use this one again. I don't have THAT much vinegar on hand so I ended up using about equal portions of white and cider vinegar with a touch of white wine vinegar just to have enough to mostly cover the meat. I also didn't have ground mustard on hand - so I used whole mustard seeds. Might be missing something (will have to see next time), but it still turned out really nicely with a lovely tangy taste to it.

Watermelon and Strawberry Lemonade

The Watermelon flavor came out too strongly in this one ... may try it again but if so it will be changed to primarily strawberry lemonade with just a bit of watermelon added.

Mama's Potato Salad

Good but as at least one other reviewer mentioned, the horseradish doesn't provide quite the kick that you might hope for. I'll probably use this recipe again, but amp up the horseradish, and probably either use spicy mustard or amp up the horseradish a bit. :)

Mushroom Chicken Piccata

I like this one ... I haven't had much luck with breaded meats previously, but this one stuck well and colored nicely. The flavor was good, and the mushrooms came out really well. Next time I will add some more seasoning into the flour mixture as the chicken itself was a bit bland.

No Bake Sugar Free Cheese Cake

While not completely sugar free (unless there is such a thing as sugar free frozen whipped topping that I just couldn't find), I like this one. I used strawberry sugar free Jello instead of lemon. I also blended fresh strawberries into the whipped topping and re-froze it before folding it into the cream cheese and jello mixture. I cooled the jello a little too much so the texture didn't come out quite right, but the flavor was fresh and tangy. I'll make it again, but next time I'll be more careful about the jello, and I'll also cut back the butter and graham cracker a little next time for a little thinner crust.

Eggnog Cookies I

I liked these, as did my husband (who is not a fan of egg-nogg). Per posted reviews I both increased the nutmeg in the recipe, and sprinkled the tops of the cookies. I also added about 1/2 tsp cloves. It took me a batch or two to nail down when to take them out (on stone cookie sheet they took considerably longer suggested). Make them small - they spread quite a bit.
