Good Old Fashioned Pancakes

Reviewed: Jan. 1, 2009
Thank you for this recipe. I made it twice in the past week, to rave reviews. The second time I cut back on the amount of salt (which seemed unnecessarily excessive), and both times I added vanilla extract to the entire batter and chocolate chips to a few of the pancakes. The thickness of the pancake helps melt the chocolate chips "just right" without burning them. Thanks again!

Hearty Split Pea Soup

Reviewed: Jan. 1, 2009
Good recipe. I put in two ham hocks instead of the diced ham, and used chicken broth instread of water (so did not add any salt given the saltiness of the broth). I added celery as well. Adding milk was a new thing for me, but I used a cup of whole milk I happened to have on hand, and it was a nice touch. However, next time I make this I will probably use skim milk to avoid the added fat. Thanks!

Marinated Flank Steak

OK marinade, but the taste of the vinegar and Wosterschire sauce was too strong for our family.

Baked Ziti III

Reviewed: Feb. 1, 2009
I made this exactly as the recipes specified, except tossed the pasta with the sour cream before adding the other ingredients. We add from this for multiple days when we didn't have time to make dinner. Thanks for the recipe.

Crispy Potato Wedges

Reviewed: May 24, 2009
These are very good for not being fried or soaked in grease. I tossed the potato wedges with olive oil, Mrs. Dash's, garlic powder, salt, pepper. Lined the pan with aluminum foil and sprayed it with Pam. I used our convection oven setting, which made the cooking go faster--a total of 30 minutes.

Basic Chicken Salad

Very simple to make, but very pleasing. My kids wouldn't eat it, but adults certainly would like it so I'd make it for company.

Pecan Pie VII

Reviewed: Dec. 26, 2009
Oops...I put a baking sheet right under pie and it turned out soupy...but delicious nonetheless. I'm a beginning baker so guessing that should not have put the pie on a backing sheet -- so will definitely try this again--it was easy and deserves another try.

Czech Cabbage Dish

Reviewed: Jan. 1, 2010
Delicious and so simple to make. It's similar to Chinese moo shu, to the point that we put some of this in some moo shu wrappers I had in the freezer. Also--I used turkey bacon instead of regular, to cut down the fat.

Best One Pot Cheese and Macaroni

Reviewed: Jan. 1, 2010
Really good and FAST, and an excellent concept for making quick homemade macaroni and cheese. I skipped the Parmesan cheese and added about 3 cups of cheddar cheese, substituted white pepper for black pepper, and used a combo of skim milk and heavy cream (what I had on hand). All family members ate it!

As good as any restaurant refried beans...much better than the canned stuff...never realized how easy and good this kind of dish can be. Thank you!

Very nice -- used half pork and half grass-fed beef, along with seasoned bread crumbs. Turned out wonderfully.
