Peanut Butter Cupcakes

Reviewed: Apr. 7, 2009
Mmmm! I love peanut butter and these were so so good! We couldn't stop eating them! I used apple sauce in place of sugar and I also added about a half a bag of peanut butter chips. The texture of these was so incredible! I'm ready to whip up a batch right now!!

Slow Cooker Italian Beef for Sandwiches

Reviewed: Apr. 7, 2009
Awesome!! My husband LOVES this! I make it on a Monday and he eats it for lunch most of the week! Super easy and delicious! I make mine with a large jar of whole pepperoncini's including the juice for some kick! Also use broth instead of water. Serve on a toasted roll and your good to go!

Frozen Caramel Latte

Reviewed: Apr. 7, 2009
Very Good! I'm a huge fan of Frapaccino's and I'm always experimenting. This recipe was very close in taste to the coffee shop. Added a lot of ice though... 12-15 large cubes. The ice didn't water it down at all and I got 2 drinks out of it. Also next time I will put 2T caramel and 1T sugar because I like a stronger caramel taste. I used starbucks caramel flavor syrup. I'll be making it all the time, I'm sure!!

Moroccan Chicken

I loved this! So delicious and flavorful! I didn't have turmeric so I used a dash of cinnamon instead. Also used chicken thighs instead of breasts. Served over rice... It was awesome!! Will be making again!

Easy Decadent Truffles

Reviewed: Jan. 20, 2009
What a treat! The changes were: 2 cups of confectioners sugar and 2 cups of chocolate chips. Used 1 package of cream cheese and rolled them into tiny balls using a 1/2 t measuring spoon. I did put them in the freezer for about 1/2 an hour before and another 1/2 hour after rolling. The colder the better. Dipped in all kinds of melted chocolate. My favorite was melted Andi's mints... SO GOOD!! Everyone loved them and they look really fancy too!

Sugar Snap Peas

Reviewed: Jan. 8, 2009
Very Very Good!!! Used onion flakes because I didn't have shallots and also substituted fresh garlic instead of garlic powder. Cooked for about 10 minutes at 450 so they were slightly browned on one side... but so delicious. My dad doesn't typically eat "different" vegetables and he ate half of the bowl! Will be making again and again!

Lemon Lover's Pound Cake

Reviewed: Jan. 4, 2009
Wasn't real thrilled with this. 1st problem was that I had to cook it at least 10 minutes longer than the recipe stated. Second, the icing didn't stick to the cake at all. It just slid right off. Wasn't crazy about the icing taste either... really sour. The best thing about the cake was the texture. Very dense. But as far as the rest... I wouldn't make it again.

Biscotti

Reviewed: Jan. 2, 2009
This recipe is the best! The texture is wonderful. The first loaf got too dark on my cookie sheet (almost burned the bottom)after just the first baking. So I baked them on a baking stone and they turned out perfect. I didn't use anise, but on one batch used just vanilla and the other put 1/2 t cinnamon, 1/4t nutmeg and 1/2 t vanilla! Loved the cinnamon ones! Drizzled them with melted white and milk chocolate chips and they are to die for! Everyone raves about them!!! Great base recipe that you could add whatever additional flavors or nuts to. Can't say enough!

Marietta's White Chocolate Macadamia Biscotti

Reviewed: Dec. 29, 2008
Yummy! Took to a party and everyone loved them! I put a little extra white chocolate chips in and a little less macadamia nuts to cut the cost a little... they are expensive to make but good for a special occasion. Dipped one side in melted white chocolate chips. Might bake a little longer next time after they are sliced so they are a little harder. Very tasty!
