I'm a full time teacher, part time reservist, and closet foodie. I love everything to do with food, from the prep to the clean up, and all the deliciousness in between. I'd love to run a food truck on day!!
My favorite things to cook
Mediterranean/Italian, but also anything that requires baking. I just love to prepare and create with whatever I have on hand. Best way to de-stress is to create something delicious in the kitchen and share it with others.
My favorite family cooking traditions
My Dad's seafood chowder for Christmas and my grandma's homemade fudge. Absolutely delicious!

Caprese Chicken
If you want a juicy, flavourful, easy to make chicken recipe, this is it. I love Mediterranean food, and this really works for me. I didn't have time to let the raw chicken rest in the marinade for as long as I would have liked,but it still turned out deliciously. If it was allowed to sit overnight... omg yum! Also, save the juices from the skillet after you're done cooking, I bet it would make a great base for a salad dressing or a broth for soup/chicken stew. I didn't add the balsamic vinagrette at the end, and to be honest, I don't think I missed it at all. Both my partner and I nearly licked the plate!! So Good!!

Creamy Brown Rice Pudding
This recipe was great as far as amounts go. I did make a few adjustments, I used 2 cups of skim milk and then 1 can of the evaporated milk. I added vanilla extract, brown sugar and a bit of maple syrup. I also added some allspice, just b/c I like it spicy. Give it a whirl, you'll enjoy it!
