Feta Cheese Turkey Burgers

These a great turkey burgers without the traditional worcestershire sauce. Thought they were a little dry but I'm sure that's easily remedied. Used capers to add salt because I didn't have the olives. The oregano was just right and if you're dieting the feta is a wonderful addition to what could be a bland meal. This is a keeper.

Zucchini Risotto

Yummy! I made a special trip to the store to get sundried tomatoes. The one mistake I made was adding salt when I cooked the risotto. I forgot that the cheese and broth would add enough salt. I also had to look up how to "soften" the tomatoes (soaking them in hot water). This is good as is, but I could see adding any vegetables to suit. Will definitey make this again.

Baked Pasta with Sausage and Baby Portobello Mushroom White Sauce

This is a 5 star recipe before my alterations! It can be a main dish or a heavy side dish. The only thing I did to alter it was add fresh basil at the last and tossed in fresh tomato because that's what I had from my garden that needed to be used. The only complaint (and I use this word loosely) is that it needs some color--either parsley or basil tossed in right before you throw it in the oven with the cheese.

Bacon and Macaroni Salad

This is amazing! The only variation I made was substituting the sugar with Splenda. This is the type of recipe that you can add or subtract whatever you like or don't like. Throw whatever you have in your garden...squash, zuchinni, green peas, onion, asparagus. Next time I'm going to put more sour cream than mayonaise to get a BLT taste.

Tilapia Scaloppine

What can I say? Best Tilapia dish I ever made! Followed the recipe without changes. Except, I wish I'd had mushrooms. Even without mushrooms, this dish came out perfectly cooked, very moist and flaky. Great sauce. I paired this with Orzo with Parmesan and Basil.

Penne with Chicken and Pesto

Yum! This dish is easy and very versatile. I cooked the chicken breasts whole and chopped up after. Used white wine to deglaze the pan, but couldn't resist a touch of cream (hang the calories), which made the difference between good and great. Can easily make this with salmon or just veggies or even beef. I will be making this again!

Baked Dijon Salmon

This is an easy, yummy way to make salmon. I followed the instructions completely except I left off the nuts, and I don't think it took away from the taste at all by doing so. Glad I read a couple of ratings because I would've been tempted to use a honey mustard rather than honey AND mustard. Sweet and tangy and light. Aces!

Cornish Game Hens with Garlic and Rosemary

Simple, easy and delicious. The aroma of the roasted garlic was almost too much to stand! My husband and I normally share one cornish hen, but this time we each at our own. I added fresh mushrooms to the sauce and used my meat thermometer for doneness, but otherwise followed the recipe exactly.

Roasted Rack of Lamb

This recipe turns out wonderfully and gives a very elegant presentation without too much fuss. I found no reason to change a thing! I tried the topping mixture on plain chicken breasts and my husband came back for seconds. Primo!

Mom's Baked Macaroni and Cheese

This recipe is so simple. I can make a small amount for my husband and myself without all the fuss of making it from scratch. I added a little ground nutmeg, but otherwise didn't alter the recipe at all.

BBQ Pork for Sandwiches

Awsome!! I took this to a Super Bowl party and it was the hit of the food table. Took the advice of the other reviewers and used beef broth and beer in the slow cooker and used a boston butt (trimming off the fat first). Cooked it the day before, put it in the fridge, then added barbecue sauce and popped it in the oven 30 minutes before we left for the party.

Cod with Italian Crumb Topping

This one's definitely a keeper. Made a couple of changes to use what I had on hand. Substituted tilapia for the cod, dropped the cornmeal and mixed together panko and parmesan bread crumbs. Also added a little cayenne pepper and paprika. Put lemon juice and olive oil on the fish and spooned the dry bread mixture on top. Came out perfectly cooked with a nice mild flavor.
