Baked Teriyaki Chicken

Reviewed: Jan. 24, 2002
Very good. Watch it though, if you are using boneless breasts. They cook in only about 20-25 minutes...if you let them go longer they are VERY dry. The sauce is yummy though.

Chicken Scampi II

Reviewed: Jan. 20, 2002
Very good, I added some chopped scallions for little more flavor.

Mmm-Mmm Better Brownies

Reviewed: Jan. 20, 2002
I made these with the oil, against my better judgement, because of all of the good reviews..nothing spectacular. Just not rich enough for me. I will try again with the melted butter, cause otherwise, it is an easy recipe.

Holiday Chicken Salad

Reviewed: Jan. 14, 2002
Why save this for a *holiday*??? This is SO very good! I didn't even have green onions or peppers..added some onion powder, and tasted just great. That hour or so sitting time in the fridge is a must..don't try to skip it. Very good made with Hellman's.

Red Enchilada Sauce

Reviewed: Jan. 7, 2002
YUM! Used this in place of canned sauce in this site's *Enchiladas* recipe. Far better than the canned junk. My ONLY comment is that the yield on this is really about 2 cups...once you simmer for 20 minutes...the water reduces.

Enchiladas

Reviewed: Jan. 7, 2002
ooooo! These are YUMMY! Forget the canned sauce, use *Red Enchilada Sauce* also from this site--the 2 cups it makes is just right for this recipe. It is made with stuff on hand and beats the canned junk for taste. I also used only 1lb of turkey and had plenty. My 5 year-old devoured this (even though he thought there were too many *yunions*) They only thing I think I will change the next time I make them (soon) will be to add maybe 1/4c of the red sauce to the meat mixture. I also used sharp cheddar, but that is merely a personal preference.

Granny's Brownies

Reviewed: Jan. 5, 2002
They were in the oven 3 HOURS and never did get done! I went back through the recipe and I did nothing wrong...this is the worst kitchen disaster I've EVER had!

Peking Pork Chops

Reviewed: Jan. 3, 2002
I made this with a pork roast and shredded it for sandwiches...VERY good! Will definitely make again.

Microwave Pralines

Reviewed: Jan. 3, 2002
These are VERY good! Used real butter instead of margerine. My only problem was that they started to firm up quicker than I could spoon them out...so I dumped it all on the wax paper and separated it with spoons. Much simpler!

Easy Minute Steaks

Reviewed: Dec. 29, 2001
I don't think the hour cooking time is long enough, mine was still very tough. The taste though was great and I will try again. (Makes a yummy onion gravy.) I think I will either try 250* for 3-4 hours in the oven or in the crockpot. Definitely a good recipe, just needs some adaption.

Bake Sale Lemon Bars

Reviewed: Dec. 29, 2001
My boyfriend and my son gobbled these! I even liked them and I don't care for lemon. (A few days later, I made them with Key Lime juice...my boyfriend was again in heaven)

Slow Cooker Stuffing

Reviewed: Dec. 26, 2001
If you can't cook it in the bird..this is the way to do it! Very moist and delicious. I added a half pound of sausage 'cause my boyfriend loves it, and left out the fungus (I HATE mushrooms!) otherwise this was just GREAT!

Angel Biscuits II

Reviewed: Dec. 26, 2001
I had never heard of an angel biscuit and was eager to try these..the disciption of a *roll-like biscuit* is an apt one. The recipe wasn't difficult, although I had to let them rise longer than the stated time and they never raised as much as I expected. I find the flavor of these a bit *strange* but that is probably just me. I think I will stick to biscuits when I want biscuits and rolls when I want rolls.

Baker's Secret Pie Crust

Reviewed: Dec. 3, 2001
This was great! I didn't have any cake flour..so followed substitution list suggestion and simply used 2Tbs.less all purpose flour. Results were wonderful! Made an awesome sweet potato pie for Thanksgiving.

Lemon Chicken III

Reviewed: Nov. 20, 2001
WAY too much lemon flavor! The marinading overnight is just far too long...I think an hour or two would be plenty. Or perhaps, just increase the lemon juice content in the sauce slighty and skip the marinade entirely. The sauce is delicious and it is a shame that the chicken itself was ruined. (It tasted if I had baked lemons!) Might try again, but with MAJOR changes.

French Bread Rolls to Die For

Reviewed: Nov. 15, 2001
These weren't too bad, but not the best I'd ever had. I felt they tasted too *yeasty*, maybe I will try again with a little less yeast. They were nice and quick, and they were edible..just nothing special.

Honey Garlic Ribs

Reviewed: Nov. 8, 2001
These are just AWESOME!! The flavor is wonderful..but the mess is not. Thank God, I own Pampered Chef stoneware and even the stickiest burnt on mess comes off with ease! If I did NOT have my stoneware, I think I would buy a disposable pan for these, but believe me, the slight cost would be worth it! I intend to make these again and again. We used thick, meaty ribs this first time, but I look forward to using a rack of ribs next time. Beware the mess..but WELL worth it! Just be prepared.

Italian Spaghetti Sauce with Meatballs

Reviewed: Oct. 18, 2001
AWESOME!! Oh, this is so good! I cannot say enough good things about this recipe. I did use ground turkey in place of the hambuger and Ritz cracker crumbs instead of the bread crumbs...easily the BEST meatballs I have ever eaten. For the sauce I follwed very closely..after the first 90 minutes, I did use a potato masher on the chunks of tomato (I was afraid my 5 year old won't like it with *lumps*!) I was also a bit leary of adding the meatballs raw, but they cook up moist and just perfect in the 30 minutes of simmering. This is WELL worth the prep time!!!

Caramelized Baked Chicken

Reviewed: Oct. 8, 2001
I tried this with boneless/skinless breasts...not sure I really liked it. Flavor was mighty intense and sweet, but the breasts were too dry. I may try this again with the wings..just to see if it affects the taste. Would NOT do it again with breasts.

Frosted Banana Bars

Reviewed: Oct. 7, 2001
These were very good..moist and yummy. I really wouldn't classify it as a cookie though...not even brownie like. I would just call it a banana cake and leave it at that. If you are looking for a bar cookie, this isn't the recipe for you. If you just want a delicious way to use up those banana...this is perfect!
