Coconut Curry Tofu

I wanted to love this but didn't. Tasted more like an Indian curry dish more than anything. Couldn't taste the coconut milk at all. Just my opinion.

Best Marinara Sauce Yet

This was a good recipe. I did take the advice of some other reviewers and used crushed tomatoes instead of stewed. Instead of fresh parsley, I used 1 tablespoon of dried parsley and added 2 tablespoons of dried basil. Since I didn't have any white wine on hand, I used chicken broth instead. I also let this simmer for 3 hours, which I think really enhanced the flavor. My husband said its taste was restaraunt quality.

Pretzel Turtles

Super easy to make and tastes amazing. I made these as gifts for the family and took them to a Christmas party and the recipients nearly finished them before they even got home. I toasted the pecans and then put them on the chocolates before sticking them in the oven. After I took them out of the oven, I then pressed the pecans to squish the candy down a bit.

Candy Cane Fudge

I didn't have any peppermint extract, so I used mint. Also, I ground the candy canes to an almost dust like texture because I didn't want anyone to break a tooth on a piece of candy cane. Everyone at worked loved the fudge.

The Best Rolled Sugar Cookies

Love this recipe. The only change I made was to use powdered sugar when rolling out the dough instead of flour. I use this recipe every Christmas and everyone loves them.

Black Bean and Rice Enchiladas

I made this yesterday for my huband's family. It was ok. Instead of using the picante sauce, I used enchilada sauce. I did add a teaspoon of salt for more flavor. I also used fresh tomatos and jalapenos instead of canned. Overall the taste was good, but the filling did still seem a bit bland. I may add a little bit of salsa on top of the filling when rolling the enchilada to add more flavor. Still it was quite a meal. We were all stuffed.
