Mom's Ground Beef Casserole

My one year old daughter loved it, we thought it was okay. Next time I make it I will cut it in half and just use the mushroom soup; because it seemed like a lot going on with the rice soup in it.

I put hamburger, mushrooms, black olives, and cooked onion and green pepper with the ricotta. We loved this and can't wait to make it again.

Chicken Enchiladas I

I thought it was good, but not great. I did not add the water per another reviewer and I am so glad I did not; it would have been a soupy mess. I cooked the onion and green pepper before adding them.

Winter Fruit Salad with Lemon Poppyseed Dressing

Best salad I have ever made! I used maybe half to 3/4 of the dressing and I did not have cashews so I used sliced almonds.

Fruit Pizza II

I loved this fruit pizza however the crust got really soft, I might try and bake it longer next time. I really think that I glaze adds that extra something. I added blueberries, kiwi, manderian oranges, and a few strawberries in the middle. I added a dash of vanilla to the cream cheese mixture. I will make this again. Great flavor.
