Mexican Bean Salad

I just made this. Yes the dressing has a lot of ingredients but it is sooo delicious. I used an extra can of beans and the salad to dressing ratio seems just fine still. This is so much better than the boring bean salad I've been making for years and its really the dressing that does it.

Pesto Sauce

Kicky Steak Strips with Rice

I thought this was great. A lot of kick. I took other viewers suggestions and added some brown sugar. Also, I didn't use top sirloin, I just bought what was on sale, what's the sense of taking a good top sirloin steak and smuthering it in a marinade? At least that's my feeling on it. Wild rice was a delicous choice too.

Asian Tuna Patties

I'm giving this a poor rating, but its possible it was my fault for them not tasting great. I followed the recipe entirely, but I think I maybe have ruined it because I didn't eat them fresh and had to re-cook. Also, I think I pressed them too hard when making the patties, probably would have been better if it were more chunky. I am definitely going to try it again.

Filet Mignon with Rich Balsamic Glaze

Okay, I made a few errors. I broiled it like someone suggested, but I didn't like how dark it looked on the outside, although the taste was still great. Also, I started my glaze way too soon and it came out just so sticky and condensed that it didn't spread well on the meet. All problems that were due to me, and not the recipe. It was my first time really cooking red meat off the grill, and def my first time making a glaze. I learned a lot though and can't wait to try it again.

Homemade Black Bean Veggie Burgers

I really loved these. Very flavorful, and you walk away just feeling good and energized, not stuffed and immobile. I didn't have a food processor so I just chopped the onion and pepper as fine as I could. I baked them, vs. grilling, and they still came out nice. I didn't alter the recipe at all, but am thinking that adding a little ground turkey in with these would be great. Perhaps 1/2 the amount of beans, and 1/2 turkey. I'll try that next.

Mexican Baked Fish

Ahhhhhh! So good and so easy! I used frozen tilapia. I really just couldn't believe how tasty the flavors were and am so surprised that some found it bland. The guac, chz, and salsa really added a lot of flavor to a fish that is def perhaps a bit bland, maybe they didn't top it with enough. I can't wait to make this again!!!

Peanut Butter Noodles

Amazing. I highly suggest using the chili paste. I used egg noodles too and it was a good alternative to the udon noodles which I couldn't find in the market, must go by another name as well.
