Easiest Mac-N-Cheese Ever!
I used to work at a pizza place that made this exact recipe minus the pepper and penne was used instead of elbow noodles. You can melt the milk and processed cheese in the microwave. I did however try it at home with 2% processed cheese and low fat milk and have to admit the full fat version with whole milk & regular processed cheese is much yummier. This dish is addicting especially when you realize just how easy it is.

Sour Cream Chicken Enchiladas
I've made this recipe several times and several ways. So simple and so very delicious! One woman commented she's gotten marriage proposals from this dish... heck I want to marry myself when I make these. I pretty much refuse to eat sour cream enchilada's anymore when these are the best I've ever had. My favorite way was with fresh cooked chicken that I boiled with chopped garlic salt & pepper & shredded. Then I cooked white onion in a bit of oil and warmed up roasted red pepper, tomato, black beans, & corn. Threw all of that inside the tortilla with sauce & some cheese & topped more sauce with a good amt of cheese. I've made them with just the veggies tonight and I'm probably going to try beef ones soon. The first helping tonight ended up falling apart but after letting it set for a bit (when I went for a 2nd helping) they stayed together and were great as usual.

Easy Sugar Cookies
I like this recipe for its simplicity. Very easy to make with ingredients I already had on hand. I read some of the reviews about it being bland so I upped the vanilla as suggested to 2 teaspoons and threw in some cinnamon for good measure. I also pulled them out early since I like my cookies soft. I'm glad I added the cinnamon and extra vanilla because they are a bit bland. I tried the whole cookie cutter into holiday shapes things and they expanded so much it was hard to tell the shapes apart. Maybe it would have worked out better if I had actually decorated them but I'm not interested in heading back to the store. My roommates bf says he really likes them.
