Chocolate Mint Dessert Brownies

These were great! I used Betty Crocker's brownie mix and I also used 1 tsp of peppermint extract in place of creme de menthe. I used dark chocolate chips for the topping instead of semisweet. These seriously tasted just like girl scout cookies, especially when you eat them chilled. Sooo good!

Eggplant and Lamb Stew

This is awesome. Everytime I have made this recipe I have used leg of lamb leftovers. I put the leftovers in the fridge and then dice it right before I put it in the stew so that it's much eaiser to chop up. Today I used lamb shoulder because I couldn't wait until I made leg of lamb to fix this again and I would say that I much prefer using the leftovers from leg of lamb since this using lamb shoulder was more difficult to get all of the meat off of the bones. The only other thing I've changed this time is my husband wanted to try it without the tomato paste, but I can already tell that I'd much rather eat it as the recipe is written. Overall though, this is great. Needs no changing whatsoever..... we fight over the leftovers.

Blueberry Oat Bars

These were great. I also used an 8x8 pan and added 1 tsp of cinnamon to the oat mixture which was a great addition. I had expected these to be 'finger food' and instead we needed spoons since it was very crumbly on top. I DID use the food processor to cut the butter into the oat mixture, so this most likely affected the extra fine crumbliness..... BUT I think it doing that actually made these SUPER awesome... it make a super yummy sugary crunchy fine topping to it.

Black Bean Hummus

Cream Cheese Jalapeno Hamburgers

I just made these the other night and they were great! I didn't have jalapeno's so I used a 4 oz can of mild diced chiles. I only used one package of cream cheese. I mixed everything up instead of putting it in the middle....I added one egg because of comments stating that it falls apart... and it still did with the egg in it. Because of mixing everything together the burgers stuck to the pan quite a big, BUT, I don't even think I'm going to try it the other way because it was still AWESOME. I think having the cream cheese cooking onto the pan with the burger is what I liked the most. So I'll probably update this again at some point because I plan on having this quite often.

Sweet Restaurant Slaw

Awesome! I am not a mayo fan but have been trying to get over that and I'm glad I didn't let that get in the way of making this coleslaw. It was great! WAY better than any store bought and I liked it more than KFC which has always been my favorite. Used a tiny bit less mayo and a little less sugar.

Classic Bran Muffins

This was AWESOME! Substituted vanilla yogurt for the buttermilk and applesauce for the oil. Have had many compliments and my 6 year old asks for it!!! That, to me, is the best part.

Tuna Noodle Casserole from Scratch

4 stars because of necessary additions for flavor. I added dill, extra salt and pepper, a dissolved boullion cube, cream cheese, paremesan, doubled the garlic, and added a small amount of lemon flavored cooking wine to sautee the veggies. I added cheddar to the cream mixture and added extra cheddar to the top and topped it with french fried onions. This was good and my family LOVED it. I felt, however, that it still needed some additional pep in the cream sauce. I didn't season the veggies so maybe doing that would help. I also will try different spices next time. Overall, very good and a dinner to look forward to.

Dip For The Stars

What a GREAT recipe! Definitely five stars. I used Clasico Sun dried tomato sauce and spread and drained it through a tight meshed strainer to get all of the oil out. I'm glad I did because there was quite a large amount of oil drained out. I also used Clasico Traditional Basil Pesto and did the same with that. Both of these were VERY flavorful and great choices. I forgot to toast the pine nuts but they were fine as is. I prepared this the night before so it could sit in the mold overnight. I was also glad that I used saran wrap first because it made it super easy to take out of the mold. I got ALOT of compliments on this recipe. I was told it was CHRONIC. :)

These were perfect! I used brown sugar in the topping and buttermilk in the mix. I had to use a bit more than it called for. Husband said they were delicious! Yay!

Prosciutto Wrapped Asparagus

This was very good and it was well liked. I blanched the asparagus a few minutes before wrapping them. I used white and green asparagus like someone else mentioned but I found that the white was somewhat more difficult to bite than the green. I will probably just use green next time. The cream cheese was a bit difficult to spread onto the prosciutto but I managed. I may try a different cheese sometime. I used bacon when I ran out of prosciutto. Very fun recipe. ***UPDATE. I made this again, but this time used very thinly sliced corned beef and added goat cheese to the cream cheese. I was told that it was much better than with the prosciutto. Plus it was at least half the price.

Spinach Tomato Tortellini

This was great! I didn't have much whipping cream so I mostly used milk. Used cornstarch instead of flour. Next time I will definitely try the whipping cream and will try fresh basil and fresh tomatoes.
