About this Cook
I have 3 boys and a husband, so cooking, planning and shopping take up a large portion of my time. I love spring and summer and love to travel. I had hoped one day to have a career with food, but that's on hold at the moment.
My favorite things to cook
It's very hard to pick a favorite...I like the results of cookies pies and cakes... :) I suppose that what I think is most fun is making something that has to set, marinate or simmer and seeing all of the ingredients blend together over time.
My favorite family cooking traditions
I'm still in the process of trying to create this. :)
My cooking triumphs
This would have to be one of the first times I'd ever cooked for anyone. I was at a very large family reunion with me ex husband's family and every family had a different night of the week to cook for everyone. On our family's night, I took over and came up with what to cook and made an assembly line to get it prepared. I had so many compliments from everyone! It was a pretty great feeling after worrying if everyone would even like it.
My cooking tragedies
When I was in 9th grade I had a chance to cook for my Grandpa and his wife and my Grandma from my other side of the family. It was my Grandpa's birthday and I hardly ever got to see him. I made meatloaf pinwheels, ( my absolute favorite as a kid and my mom's recipe) I didn't realize that when my mom cooked this, she sliced the meatloaf and laid it on foil to cook. Instead I put the huge log of meatloaf in the oven whole and needless to say, it was no where near done when I had everyone seated to eat. I was so embarrassed and no one complained until I mentioned my meatloaf was raw.... thank goodness for the microwave. :(

Chocolate Mint Dessert Brownies
These were great! I used Betty Crocker's brownie mix and I also used 1 tsp of peppermint extract in place of creme de menthe. I used dark chocolate chips for the topping instead of semisweet. These seriously tasted just like girl scout cookies, especially when you eat them chilled. Sooo good!

Eggplant and Lamb Stew
This is awesome. Everytime I have made this recipe I have used leg of lamb leftovers. I put the leftovers in the fridge and then dice it right before I put it in the stew so that it's much eaiser to chop up. Today I used lamb shoulder because I couldn't wait until I made leg of lamb to fix this again and I would say that I much prefer using the leftovers from leg of lamb since this using lamb shoulder was more difficult to get all of the meat off of the bones. The only other thing I've changed this time is my husband wanted to try it without the tomato paste, but I can already tell that I'd much rather eat it as the recipe is written. Overall though, this is great. Needs no changing whatsoever..... we fight over the leftovers.

Black Bean Hummus
This was the first thing that I made with my new food processor. We loved it. It was perfect and a great thing to eat with veggies when you're dieting and want to skip out on the ranch.
