Chicken Enchiladas II

My entire family loves this recipe as-is. It is basic (which my kids like), but could easily be added to or enhanced, as many reviewers here have done. However, at some point, it's not even the same recipe, so one or two tips for readers are great, but if you've added or changed tons of ingredients, then just submit your own recipe!

Baked Ham and Cheese Party Sandwiches

This is a great recipe! The changes would make: 1) Use the traditional Sunbeam dinner rolls--the sauce absorbs better into the bread, and you can bake them in the pan provided too! 2) Use less butter--I think 1/2 Cup would be plenty so it's not so oily/greasy 3) Possibly? Pour 1/2 of sauce over sandwiches before adding the top bread, then pour the rest over the top

Banana Pudding IV

This recipe is great and really easy! I took the suggestions of other reviewers and mixed vanilla and banana cream pudding mixes. I did make a mistake and failed to completely beat the cream cheese before adding the other ingredients, so there were little lumps of cream cheese throughout the pudding. It still tasted really good and my guests did not seem to notice, but next time I will read the recipe more carefully! I have made several attempts at cooked banana pudding recipes over the years that completely FLOPPED (banana soup, anyone?) but this recipe is so easy and tastes wonderful and rich! It was a big hit at our New Year's Eve dessert & coffee party.

Fruit Salad Dressing

Great dressing! It keeps cut pears or apples or bananas from turning brown. However, it wasn't great after storage, especially with the bananas in it, so I would suggest only cutting the amount of fruit you think you will need and then you can save any leftover dressing in the fridge for another day and add it to some more freshly cut fruit.

Old Virginia Wassail Cider

This brought back memories for the grandparents! We loved it. My 6-year-old daughter even liked to drink it cold because she doesn't like hot drinks. But everyone else drank it hot. It was great either way. I don't ever have cheesecloth lying around, but I at least should have strained the cloves out after preparing the recipe because some of them sank after they got saturated and then it is a lot harder to fish them out.

Holiday Chicken Salad

This is a great chicken salad. My husband loved it! I used a prepared rotisserie chicken from the grocery store and just pulled the meat off the bones. This made it easy and quick to prepare. I used just a touch of the green onions because I knew we would eat it for several days and sometimes onions can make recipes too strong when you store them. I might leave the onions out altogether next time, but if it is going to be eaten all at once, it would be okay. It has nice colors for the holidays, but this would be great in the heat of the summer too!

Amish Breakfast Casserole

I made this for Christmas brunch and we ate almost every bite. Even the kids loved it and all the adults had seconds. It is a great recipe for those who are not fond of sausage, which is in almost every breakfast casserole. I will make this again and again! It would make a great potluck recipe too or something to take for a family who has had a new baby. Lots of people bring dinners, but it is nice to have something to pull out and heat up for breakfast that is already prepared.

Peanut Butter Vegetable Chicken Soup

Everyone loved this soup. Someone commented that it had an "Asian" taste which I think was due to the peanut butter. Next time I might put a little less peanut butter, but we loved this recipe.
