Baked Spaghetti Squash Lasagna Style

I have never tried spaghetti squash until now...LOVE IT!!! I did make this dish in a 9x9 baking dish and it turned out perfectly! I love to make all of my sauces from scratch so I can add tons of veggies so this recipe was great!! Even the "meat" eaters in the house loved it!!

Nat and Darcy's Amazing Eggplant Lasagna

I love this recipe although I do make some changes/additions!! I make it with 1 eggplant and 1 zucchini - let both of them sweat in a colander and then use them as the layers. I also use fat free ricotta and a bit of parmesan cheese (no mozzarella around!) on each layer. I tend to like homemade pasta sauces so I can add tons of veggies!!! Overall an awesome idea and I've had tons of compliments!!!

Peanut Butter Balls III

I used 2 1/2 cups low fat, smooth kraft Peanut Butter & 2 3/4 cups of Confectioners Sugar and these turned out absolutely amazing!!! Little bit of water on your hands helped roll them out!!! Awesome recipe...will definitely keep making these!!

To Die For Blueberry Muffins

These muffins tasted great! I followed the recipe pretty closely, but I almost always substitute some applesauce for butter (trying to make things healthier!!), and also use part whole wheat flour. You could never tell the difference!! I also only put the topping on half the muffins and the ones without tasted just as great! I do have to say that even though I sprayed my pan, I did have trouble getting the muffins out nicely.

Gourmet Mushroom Risotto

Really tasty risotto - fairly easy to make although it did take awhile at the stove!! Too many mushrooms though - I cut them in half and still had way too many for our tastes.

Oatmeal Peanut Butter and Chocolate Chip Cookies

These cookies weren't bad - as an Oatmeal Chocolate Chip Cookie!! I used about 1 cup of Peanut Butter & even still I couldn't taste it at all. Don't know if I'll make these again though.
