Burrito Pie

Reviewed: Sep. 26, 2009
As written, I'd give this 3 stars. The meat mixture was very bland and the beans gave it an odd texture, so I didn't add them all. I added taco seasoning and salsa to the meat mixture. Next time I will add more olives and chiles. I took someone else's suggestion and spread the beans on the tortillas instead and stacked 2 of them bean side down instead of using 1. I served with sour cream and taco sauce and it was delicious.

Bake Sale Lemon Bars

Reviewed: May 3, 2009
I made this recipe as written except for using more lemon juice. The baking time is off. The crust was burned before I added the filling- I can't imagine it would take 20 minutes in any oven. By the time the filling was set (~15 minutes), the entire edge was black and stuck to the pan. After 1/4 cup of lemon juice, we decided there wasn't enough lemon flavor, so I ended up using about 3/4 cup. Also, these are VERY thin. Not the thick bars I was looking for.

Aussie Chicken

Reviewed: Jan. 5, 2009
Yummy, but very rich! Tasted like something from a restaurant- definately a "treat" meal. Next time I will half or quarter the sauce ingredients- I used 5 breasts and still have 3/4 of the mixture left. (And any more sauce would have been overpowering!)

Baked Spaghetti I

Reviewed: Jan. 5, 2009
As written, this is a 3 star recipe. It was very dry and bland in my opinion. We made the following changes: used 1 whole green pepper, 2 jars of mushrooms, 1 & 1/2 pounds ground beef, subbed mozzarella cheese, simmered beef mixture with 1 jar of sweet basil spaghetti sauce and used a smaller dish so that it somewhat held it's shape when you cut it. The mushroom soup mixture gave it an odd flavor when reheated. With our changes, though, I would give it 4 stars. Still missing something.

Rum or Bourbon Balls

Reviewed: Dec. 29, 2008
As written, these were way too strong for me; they tasted like a straight shot of bourbon. Reduced to 1/3 cup bourbon and they were fine. They never really set either time I made them and were quite messy, but good.

The Best Rolled Sugar Cookies

Reviewed: Dec. 25, 2008
I followed this recipe exactly as written, but the cookies were a little bland and seemed overbaked (I even adjusted the baking time by two minutes less because of my oven.) I love making homemade cookies, so I'll probably try this again with some adjustments. But as written, it's not worth the effort in my opinion.

Famous Butter Chicken

Reviewed: Dec. 25, 2008
This recipe was delicious! The chicken was moist and tender. As written, the coating sounded bland to me, so I used seasoning salt and other spices in the cracker mixture. Also, this was WAY too much butter for the four large chicken breasts I used. The top browned perfectly, but the bottom was soggy from the melted butter. Other than that, one of the best chicken recipes I have tried!

Caramel Pie II

Reviewed: Dec. 24, 2008
Delicious! I boiled the cans for 2 hours the first time I made it and the pie was a little runny after chilling overnight. The second time I made it, I boiled them for closer to 3 hours and had a thick, creamy pie. I sprinkled mini chocolate chips and pecan pieces on top and covered with whipped cream. Yum! I've also used the mini graham cracker crusts for individual desserts- so cute!
