King Ranch Chicken Casserole I

This is great...we called it "Mexican Chicken"...great for dinner entree or brunch...to aip up the flavor, I have added red pepper flakes and garlic is a MUST! dON'T USE LOW FAT OR FF CHEESE...DOESN'T MELT OR SPREAD WELL. How did it get this name of "King Ranch Chicken Casserole"??? Does anybody know? Alittle chicken can go a long way.I often cut the chicken breasts horizontally and make thinner slices.

Breakfast Sausage Roll

I adjusted this recipe and have used it at ALL gatherings...by request...family & friends expect it...HOWEVER, I always use rolled out crescent rolls dough...flour a surface and roll thin...substituted FRESH chopped onions and FRESH mushrooms as well as not so rubbery cheese...I used either a combo of swiss and mild cheddar OR parm....roll up like a jelley roll and brush top with egg white...THIS IS A SLAM DUNK!!! May be frozen after partially baking and ready to go at a moments notice.....TRY this alteration !!!One lb. of sausage(spicy) and a pkg of crescent rolls make at least 4 nice size sausage rolls...great for buffet breakfast OR appetizers with cocktails.

Iced Pumpkin Cookies

The ingredients sounded GREAT...but they were bland....maybe need either raisins or nuts....rhe icing helped...but needed quite a bit to give the cookies taste...good with tea for a loight tasting treat....next time I will add an additional half+ cup of sugar and golden raisins and/or pecans!

Sweet Potato Gnocchi

I found this to be ever so bland...followed the recipe exactl except more fresh garlic...made a light cream sauce to spoon over the top.....it was quite time consuming, even making the sweet potatoes in the microwave! Not our tastes at ALL....sorry...this is the first recipe I have tried and was dissatisfied.

Spicy Green Beans and Pork, Asian Style

This is a GREAT dish! I adjusted a few ingredients to my taste. I used 6 cloves of garlic I minced(not minced from a jar, ever), 4 green onions, an additional tsp. fresh ginger, and a 1/2 tsp of dry crushed red pepper...also I used twice the amount of soy sauce(low sodium). I prepared the ingredients beforehand and put them each in a small bowl and first time I made the spicy beans served them over brown rice....if you want the"sauce" to be "soupier", add a bit more water....I forgot that I also added a tsp of sugar as well! LOVE this...might try it next time with ground turkey or chicken!!! Definitely a main dish...but key is ONLY fresh spices and good quality ingredients...garlic chili pastes come in a huge variety at a higher end grocery...don't have to shop at a specialty Asian store.
