Chocolate Mayonnaise Cake II

Reviewed: May 9, 2003
My first cake using this recipe was nice and moist, but not chocolate-y enough. I increased the cocoa to 1/2 cup, and all I can say is WOW!

Kathy's Roast and Vegetables

Reviewed: Feb. 19, 2003
Great recipe! This was my first try with a slow cooker, so I was a little apprehensive, but wow, what great flavor. I cooked on high for 4 hours and the roast just fell apart and practically melted in our mouthes! I had to really squeeze to fit a 3 lb. roast in my crock pot, but it cooked really well! After the meat was done, I took it out and added more potatoes to the pot and cooked for another couple of hours. I have no idea how the original recipe is supposed to serve 12 because we devoured it between my fiance and myself for dinner and lunch the next day!

Love Soup Mix in a Jar

Reviewed: Dec. 14, 2002
This soup is so good and makes you feel like a great chef even if it's your first batch of soup! It works well with ground beef or with another cut of meat. The only problem I had was after it cooled, the rice, barley, and pasta kept absorbing the liquid! It made one big lump of soup! Kind of more like a gravy or a stew. So when i went to reheat it, I had to add more water--it was good the 2nd time too but just not as "pretty" as the first time! LOL Definitely good flavor though!! And a pretty mix of ingredients!

Cowboy Cookie Mix in a Jar

Reviewed: Dec. 14, 2002
I thought I'd bake up a sample batch before packaging this up for gifts and it turned out fairly well. I didn't have any nuts in the house, so I substituted white chips--waaay too many chips for the dough! I was left with a handful of chips in the bottom of the bowl. Oh! That's why! {Face turning red as she looks at the recipe} The recipe calls for 1/2 cup nuts, I was trying to fit in a full cup! OOPS! My mistake! Other than that, the recipe turned out really good. I was all out of vanilla too but the cookies weren't lacking flavor at all. The only problem I had was with the chips melting and sticking to the sheet, but that was my mistake! Can't wait to get some jars and start packing them up!

Chili I

Reviewed: Oct. 24, 2002
This chili is awesome!!!!! The sweetness balances out the spiciness; the spiciness brings out the sweetness. A perfect combination. This recipe was such a hit!! I was a bit skeptical about some of the ingredients and had to put a little $$ into buying the spices, but ohmigod, is it worth it! I used just ground beef, and also wasn't sure which peppers to buy, so I used the ones labeled "long hot peppers", which added only a green pepper flavor. Absolutely DO NOT leave out the cayenne pepper!!! I did the first time and it was okay, just a little blah. My second batch I added the cayenne and WOW, what a difference. Probably could leave out the cayenne if you used hotter peppers like jalapeno or serrano, etc. This recipe is a definite "keeper" and is definitely worth the extra prep work and buying the extra spices that I didn't have on hand. I will definitely be making this chili again. I usually hate chunks of vegetables but it all cooks down together and is soooo good! The addition of coffee, cocoa, and dark beer "scared" me at first since i don't like beer and had never used coffee and cocoa in anything other than desserts, but NO WORRIES, MON. Don't be scared. This stuff is awesome exactly as the author wrote it!!!

Iced Pumpkin Cookies

Reviewed: Nov. 20, 2001
You can't go wrong with this recipe. I already posted 2 reviews and I'm still getting requests all the time!! I use 3 tsp. pumpkin pie spice instead of the individual spices and they turn out great. I always double the recipe too because there never seems to be enough!

Jay's Signature Pizza Crust

Reviewed: Jul. 2, 2001
I reviewed this once but had to come back to say it again. This dough is excellent!! I use it atleast once a week now. One time I hurriedly turned the oven to 325 instead of 425 and the crust turned out nice and tender all the way through. No crisp crust to chew through! We bake it at 325 all the time now!
