Pineapple Pie III

My BIL asked me to find a two-crust pineapple pie recipe for Thanksgiving 2002. I immediately turned on my computer and found this one at allrecipes.com. Imagine my suprise when not only my dear BIL but my dad and brother also chose this pie over their own personal favorites! I have made this pie at least 2 dozen times in the past 18 months and everytime it tastes better! I had to make 4 of them in the month of April alone! Sometimes I go to the pantry and find that I only have tidbits or chunks. I just run them through my mini-chopper and voila! -- crushed pineapple! My only suggestion would be to "wash" your uncooked crust with a beaten egg before you pour the still-warm filling into it in order to assure your crust will not be soggy. My BIL insists this recipe is perfect just the way it is!!!

Italian Creme Layer Cake

Every time I make this cake I get rave reviews. It has been a consistent hit at fundraising bake sales, silent auctions, family dinners, reunions, alumni parties, and home. It has been my "signature" cake for 10 years and even the most discerning bakers I know prefer it over other Italian Cream cakes or (HORRORS!) any made with a boxed mix. I have used it for cupcakes, 9 x 13 single layer, 9-inch layers and 5-inch towers. The ONLY thing I change...I do not mix the pecans into the icing because it shreds the tender crumb of the sponge cake......I just sprinkle the pecans around the lower half of the sides and the top of the cake.

Coconut Cream Cake I

My family loves this cake. It reminds us a little of my grandmother's coconut layer cake AND our favorite Mexican Food Restaurant's Tres Leches Cake rolled into one. Definitely 5-star worthy.

Slumgullion

I grew up eating this with a slight modification - my grandmother always added the stewed tomatoes and seasonings (salt, pepper, garlic powder and a little chili powder) plus 2 cups of water at the same time she added the tomato sauce, simmered it for about 15 minutes and then added the dried pasta directly to the meat and tomato sauce. Mamow's method not only seasoned the pasta but thickened the sauce at the same time. We never had mushrooms in our Slumgullion.

Incredibly Delicious Italian Cream Cake

Please excuse the rating/review......I confused this recipe with another....will leave the 5 star rating because I am sure it is just as good as the other because the ingredients are almost identical....except the other is a sponge cake which is put together a little differently.

Ham and Cheese Quiche

I've been using this recipe for almost a decade now and have modified it to suit whatever leftovers I have hanging out in the frig.....cubed, baked potato for the mushrooms, thick-sliced bacon for the ham, etc. My only constant change is that I totally cover the bottom crust with sliced swiss cheese and top with shredded swiss but that's just a personal preference, not to mix the cheeses in the same dish. Even the men in my family find this a hearty lunch served with a salad.

Moist German Chocolate Cake

I have made this cake 4 times in the last 2 years, twice for a dear friend's birthday (his favorite) and twice as the cake base in my Black Forest Trifle. Everytime it has been a huge hit! I spent over an hour last night looking for my printed version because I am making the Trifle for a company luncheon tomorrow. I finally decided to look here even though I thought I might have to wade through a bunch of recipes to find it. Halleluah!!! It was the 3rd one in the search results! No box mix for me when this super moist recipe is so easy.

Sweet Potato Pie I

My husband prefers sweet potato to pumpkin so I turned to AR to find a "from scratch" recipe. It has a wonderful creamy, yet toothsome feel and rarely survives a holiday meal. I follow this recipe as written except that I egg wash my crust before I put the filling in and my pie turns out perfect each time.

Saucy Stuffed Peppers

[UPDATE] I follow this recipe exactly as written almost everytime using Uncle Ben's Converted Rice and have never had any issues with the rice being crunchy on top and mushy on the bottom. The only thing I have done differently is twice I used a little V-8 with the tomato juice (I wanted to finish an opened bottle of V-8). My suggestion for those who have had rice issues is to make sure your peppers are wedged into a single layer in your pot OR weigh them down with a plate or steemer basket so that there is at least 2" of sauce covering them. When I "stir" them, I am usually just making sure they are still covered and sometimes move them around the pot like a carousel. My extended family asks me to make these several times a year for our monthly Sunday dinners and they bring large empty yogurt containers to take any home that survive dinner. All generations of my extended family have been eating stuffed peppers their entire lives and without exception, they believe these are the best they have ever had. I have been asked for this recipe so many times that I have it saved on my computers at work and home so I can forward it upon request.

Texas Sheet Cake V

My husband and his chocoholic brothers love this cake......although, some of them prefer to leave the icing off. I follow the recipe exactly except that I bake in a stard 9 x 13 pan for a thicker cake and I add 20 minutes to the bake time.

Dutch Apple Pie with Oatmeal Streusel

This was my first successful attempt (seriously) at apple pie and it received rave reviews from my co-workers. I am usually not very successful with fresh fruit pies so I stick to custard pies most of the time. I followed the recipe exactly except a uded 3 tablespoons of flour in the filling mixture as recommended by others. I will make this again....and use homemade crust next time. That should really make my husband dance.

Angela's Awesome Enchiladas

Made these last night with leftover rotisserie chicken...seemed a waste to not use it and save the poaching time. I also used 5-inch corn tortillas (in Texas it is a burrito if wrapped in flour tortillas) and skipped the black olives. I also used a dry enchilada sauce mix instead of the canned because I already had it. My husband is a plain food guy, raised on the farm, who usually doesn't like anything other than straight up chicken (fried, baked, or roasted) and thinks enchiladas must have ground beef in them....until he tasted these. I was resigned to having to eat all 16 enchiladas myself for the rest of the week (and then some) but he ate three helpings...and we even have rice and refried beans, not to mention chips and salsa to go along with them. I will definitely make these again...but may try layering like a casserole next time. This will be a great potluck or family reunion dish.

Slow Cooker Taco Soup

2010 Edit - I have made this soup with ground beef, stew meat, cubed pork, chicken and strictly vegetarian. It is a great, versatile recipe. My family especially loved the pork version in which I substituted hominy for 1 can of beans. I love this soup!!!!! It freezes well too. I use all pinto beans, 2 taco seasoning packets and add the Ranch Dressing mix also. Definitely a hit when I share with friends and family.

Country-Style Steak

Delicious! Made these for hubby last week but he insisted that he didn't want me to braise the steaks in the gravy so I just flipped the steaks an extra time, making sure they were cooked through, and served the gravy on the side with mashed potatoes and a garden salad, kind of like chicken fried steak but without the extra breading. I reheated the leftovers immersed in the gravy in the oven as in the original instructions and they were even better than when freshly fried. I do not expect him to object to the original method again.

Grandma's Lemon Meringue Pie

I LOVE lemon meringue pie but have never attempted to make it.......but this recipe was foolproof! I followed the recipe for the curd and meringue faithfully and it was wonderful! Even my DH, who would rather have meringue pie than anything other sweet, loved it. I got 2 small pieces, he ate the rest of the pie!

Pumpkin Cake I

This is the most moist, flavorful, pumpkin cake I have ever tasted. I made this cake for a co-worker who loves pumpkin anything for her birthday in March.....it was a huge hit...so moist and flavorful. In June I took it to a family reunion and it was the first dessert to go. The only think I did differently was make a "light" cream cheese frosting with 8 oz reduced fat cream cheese, 1 large pkg of instant vanilla pudding mix, 1 cup milk, 1 tsp vanilla and 7 oz reduced fat whipped topping (Cool Whip). Both times I served the icing on the side and people just put a dollop on top of their slice if they wanted it. Other than that, I followed the recipe exactly. Why mess with a great recipe?
