Shrimp Scampi II
This did not turn out well for me, at all. Be sure to use dry white wine - I used what I had on hand, and obviously that was a bad choice. Also, the lemon was over powering even though I cut it down to 2 Tbs. from 5 Tbs. Probably should use 2 tsp. I might have the courage to try it again sometime with the right wine and much less lemon juice, but it will be a while!

Irish Beef Stew
This is an awesome recipe. Took it to a work function and had none left over! Only thing I added to the recipe was a few dashes of rosemary, thyme and pepper. Delicious!

Amazingly Easy Irish Soda Bread
Just made this for an office function to accompany Irish stew. It was an absolute hit! Very easy to make too. I had one issue though - as I was making it, I realized that I was out of eggs and had no time to run to the store. I used egg beaters - all I had was the cheese and chive variety, so I was a little concerned about how it would affect the taste. In the end, it worked, and no one could taste the cheese/chive mix in the bread.
