Chicken Fried Chicken

Literally the best fried chicken I've ever had. And it makes me proud that I am the person who made it! Exactly how the recipe calls is best -but I have made it without the potato flakes and it turns out fine. Also, the reccomendation to dip the chicken in egg, then flour, then mixture is hands down the best way to make this!!

This is an excellent side dish for any potluck, or just your regular dinner! And I am an oddball, because I like the amount of sugar that the recipes calls for.

Red Skinned Potato Salad

This is absolutely a keeper. I have now made this potato salad for every family event, potluck, BBQ, and anything else in between! The ONLY change I made was to add 1/2 C Mayo and 1/2 C miracle whip, because I like the flavor miracle whip adds. It isn't necessary though, this recipe is fabulous as is! Thank you for sharing it!!

Chicken Enchilada Casserole II

This meal has become a weekly staple in my home. I used this recipe a couple months ago, and have made a couple slight changes from other reviewers advice. I do cook the chicken in taco seasoning, after boiling and shredding it. It adds a great punch of flavor. I also use black beans instead of chili beans, and I have used both cream of mushroom or chicken. Both are fine. I actually prefer cream of mushroom soup in the recipe. All in all, this is a fantastic quick dinner, and one we can enjoy over and over. Tex-Mex at it's finest!

Peanut Butter Kiss Cookies

Sooo good, and super easy. I have an oven that cooks a little hotter than most, so I shortened cooking time to 8 1/2 mins. Also it definitely helps if you stick cookie batter in the fridge for a few mins prior to cooking. The cookies turn out rounder. This recipe will now be a regular at my house!
