Joy's Prizewinning Trifle

Joy, you've got a winner! Everyone at our recent housewarming party loved it. I used cheesecake pudding mix (made as directed on the box) with a little splash of vanilla. I also did what others suggested and soaked the banana slices in the pineapple juice. This was so delicious and pretty. I will definitely make again!

Antipasto Squares

Doubled the recipe for a recent housewarming party and got rave reviews. I followed the advice of previous reviewers and baked the first layer of cresecent roll dough for 6 minutes. I also forgot to bake mine covered, but didn't seem to be a big deal. Bumped up the temperature to 375 for the last few minutes. Yummy!

Baked Pineapple Casserole

This was WAY better than it sounds! I had a free loaf of bread and some fresh pineapple that I needed to use up, so this seemed like a good way to do it. I cut the sugar in half and used probably 8-9 pieces of bread. I cut my fresh pineapple in small chunks (even smaller than what comes in the can). Next time I think I will use only three eggs.

My Country Style Steak

This was my first time cooking with cube steak, so I appreciated how easy it was! I thought the flavor was good, and hubby liked it, so I'm sure I will make it again. Served with mashed potatoes, green beans, and salad.

Green Chile Beef Tacos

Delicious and so easy! Hubby and I loved this. We ate our meat in tacos on the first day and then over rice on day two. This will DEFINITELY be added to our rotation!!!

Herb-Stuffed Red Peppers

We really liked this. I only had green pepppers, and although the husband thought they worked fine, I thought they tasted too bitter. Would definitely recommend sticking to the sweeter red pepper.

Wonderful Banana Cake

This is great! I ignored the baking instructions in the recipe and just followed others reviewers' suggestions. I topped mine with a mixture of banana cream pudding and cool whip then some crushed pecans and walnuts. We loved it!

Baked Ziti I

There's a reason why this is so highly rated, people! It's delish! I did what others recommended and mixed some of the sauce with the pasta so it didn't dry out at the bottom. I also only used 1 cup of sour cream, because that's all I had, and it worked just fine. Cooked come green bell pepper and mushrooms with my meat and onion mixture. I served this while my parents and in-laws were over for a visit, and everyone loved it!

We liked this a lot, and it tasted even better as leftovers. Had to add more seasonings, but that was an easy fix. I used turkey smoked sausage. Will make again!

Slow Cooker Beef Stew I

Maybe I did something wrong, but I thought this was just okay. I ended up having to add a lot of seasoning because as it was, it was too bland. I threw in some leftover corn, too. It was easy, so I might revisit the recipe and make some tweaks if I have some stew meat that needs to be used up.

Cornish Game Hens with Garlic and Rosemary

These were yummy and pretty easy! This was my first time cooking Cornish hens. I didn't have a roasting pan, so I used my cast iron dutch oven. Had to cook them for quite a bit longer than stated, but followed other instructions. My husband and I both enjoyed this for Christmas dinner.

Chicken Tortilla Bake

Pretty good for such a simple recipe. I used flour tortillas and added some corn. Next time I will use less chicken broth and pay attention to the "finely chopped" part about the onions. Mine weren't quite fine enough and were still crunchy. haha

Cheesy Salmon Pasta

I used baked salmon and skipped the onions because I didn't have any. I used more pesto than called for as well. This was pretty good! A different way to eat salmon, but I liked it.

Sweet Mustard Chicken Bake

This was delicious and so easy. Husband loved it. I used chicken tenderloins as that's all I had an just baked for a shorter amount of time. Used less butter and added more pepper. Excited to have a new, easy chicken recipe for busy weeknights! Thanks for sharing!

Pumpkin Chocolate Chip Muffins

These were so yummy! Only changes I made were using around 1 cup of chocolate chips and replaced 1 cup of the AP flour with whole wheat flour. I also made these into mini muffins. We loved them.

Extreme Banana Nut Bread 'EBNB'

Taste was good but for some reason baking time was WAY off for my loaves. I smelled burning at 38 minutes. They were ok, just dark, and they didn't rise at all. Might try as muffins next time.

Baked Dijon Salmon

I had really high hopes for this recipe, but for me it just didn't work out. Fish was dry and flavor wasn't spectacular. Maybe it's just the cooking time/temperature didn't work with my pieces of salmon. Husband liked it!
