No-Cream Pasta Primavera

Delicious and totally customizable based on what you have on hand. I left out tomatoes and asparagus and added some mushrooms. We all loved it.

Sweet Pepper Pasta Toss with Kale

This was really easy and a great new way for me to use up all the kale in my garden. I used probably 5-6 cups of kale, and it still cooked down to almost nothing. I added more seasoning and some chopped black olives. We both really liked this. Great summer time meal. Served ours with steamed squash.

Kielbasa and Cabbage II

Fab-u-lous Refried Beans!

Tasty Lentil Tacos

These were really yummy. I added cumin, chili powder, and cayenne in place of the taco seasoning. The taste is very much like taco meat, just with a different texture. I made homemade taco shells in the oven, and we topped ours with cheese and fat free greek yogurt (in place of sour cream. Will make again!

Orange and Lentil Soup

This is was interesting! Hubby liked it, I thought it had an interesting flavor. I think it cooked have cooked a little longer as the celery was still quite crunchy. I added a little salt, some more thyme, and a splash of half and half. I doubled the recipe to make leftovers for the week, and we still only got 4 servings out of it.

Chicken Wild Rice Soup I

This is delicious! I used a roasted chicken from the grocery store and I think that made it even better. I also added a bit more salt (since my broth was low sodium) and some garlic powder. Took this and some homemade yeast rolls to a family who just had a bably and they LOVED it. Can't wait to make it again. The half and half makes it creamy and wonderful.

Slow Cooker Creole Black Beans and Sausage

Super good and super easy. I used half turkey smoked sausage, and half andouille. I used for cups of black beans that I had in my freezer, and since I didn't have any green peppers I just threw in a small can of diced green chiles. Ours was super spicy, but still delicious. Served over brown rice.

Caramelized Baked Chicken

This was pretty good. I used a whole chicken that I cut up, and followed others' advice to thicken the sauce with some cornstarch on the stove top. I baked with foil on for 45 minutes, foil off for 15, and I turned on the broiler for a few minutes to get everything browned up.

Todd's Famous Blueberry Pancakes

Made a big batch of these pancakes to throw in the freezer for easy breakfasts. I replaced half of the flour with whole wheat flour, added a touch of vanilla extract, some cinnamon, and a bit more sugar. Used fresh blueberries. Easy peasy and yummy!

Sweet Potato Rolls

Used the dough cycle on my bread machine to mix these up, then let the dough rise in the bowl as instructed. I split mine up between two smaller square baking dishes, baked, and then stuck in the freezer for future use! I did try one, and it was yummy. Can't wait to heat them up and brush with some butter.

Joy's Prizewinning Trifle

Joy, you've got a winner! Everyone at our recent housewarming party loved it. I used cheesecake pudding mix (made as directed on the box) with a little splash of vanilla. I also did what others suggested and soaked the banana slices in the pineapple juice. This was so delicious and pretty. I will definitely make again!

Antipasto Squares

Doubled the recipe for a recent housewarming party and got rave reviews. I followed the advice of previous reviewers and baked the first layer of cresecent roll dough for 6 minutes. I also forgot to bake mine covered, but didn't seem to be a big deal. Bumped up the temperature to 375 for the last few minutes. Yummy!

Baked Pineapple Casserole

This was WAY better than it sounds! I had a free loaf of bread and some fresh pineapple that I needed to use up, so this seemed like a good way to do it. I cut the sugar in half and used probably 8-9 pieces of bread. I cut my fresh pineapple in small chunks (even smaller than what comes in the can). Next time I think I will use only three eggs.
