Janine's Best Banana Bread

This was a firm bread, not overly sweet, with a mild flavor. I prefer a moister and sweeter banana bread. It was just ok.

Roasted Garlic Cauliflower

Loved this! I used 6 cloves of fresh diced garlic. I followed other recommendations to bake at 400 for about 20 mins. I loosely covered the pan with foil for the last 10 mins. (I removed it before broiling at the end.). Delish!

Pot Roast, Vegetables, and Beer

Nice pot roast recipe. Had to tweak it a bit (used regular mustard and had only one can of beef broth on hand) but it still came out good. Roast was flavorful and tender.

Hamburger Steak with Onions and Gravy

This was a good meal. I did substitute ground chicken for the hamburger and the family didn't even notice. I didn't have sherry so I used marsala cooking wine and it still tasted great. I wish I had doubled the gravy ingredients because there wasn't enough! :) Will definitely be making this again.

Eggnog Quick Bread

LOVED this bread! After reading the other suggestions I did increase the egg nog to 1 1/2 cups and I used 2 Tbsp of Bacardi's white rum instead of the extract. It was so moist and delicious. It was more like a pound cake, sweet enough for a dessert. This one is definitely a keeper.

Classic Shepherd's Pie

Way too much Dijon - it overpowered the dish. I tried to compensate by adding more ketchup & Worcestershire. There are much better shepherds pie recipes out there. Keep looking.

Buttery Spritz Cookies

Very good spritz cookie. Made exactly as directed and when we tested the first batch they were way too almond for our tastes. I tweaked the rest of the dough by adding 1 more tsp of vanilla and it was perfect. Worked very well in the spritz press when the dough was kept chilled. Would definitely make again.

Chocolate Zucchini Sheet Cake

This cake was very moist and delicious. I added 1 1/2 tsp of cinnamon to the batter and I substituted 4 tbsp whole milk and 2 tbsp half and half for the 6 tbsp of evaporated milk in the frosting. I shredded 5 small zucchinis to make the 2 cups. The pulse setting on my blender shredded it very well. My kids even loved this cake. It was very good but I would put more cocoa in the batter next time to really bring up the chocolate flavor.

Banana Cupcakes

We thought that the cupcakes themselves were okay. They did have a nice banana taste and they were a little dense. The frosting was too buttery so we had to add extra powdered sugar, milk and a teaspoon of vanilla. I probably will not make it again.

Pumpkin Ginger Cupcakes

This recipe is excellent! I had to make a couple of adjustments and was still delicious. My market didn't have canned pumpkin so I substituted canned squash and it worked fine. I entered these cupcakes in a competition today and they won 1st place! They taste more like a gingerbread and were very moist.

Cola Pork Chops

So easy and so delicious! I doubled the ketchup, Coke and brown sugar and used boneless pork chops. I put it all in the crock pot and cooked it low and slow all day. So tender you could cut the chops with a fork. Even my kids liked this! I will definitely be making this again.

Russian Tea Cakes I

Very good recipe! These cookies reminded me so much of my childhood. I prefer to roll my cookies in the powdered sugar while they are still warm because the sugar melts on them to make it seem as if they were dipped in icing. Then I sprinkled powdered sugar on them after they were completely cooled but before serving. Delicious!

Seven Layer Magic Cookie Bars

Absolutely delicious! I've made other recipes like this in the past but this is by far the best one. I did follow the other reviewers' suggestions to pour half of the condensed milk over the graham cracker crumbs (I crushed one sleeve of crackers - perfect amount) and the other half over the top of the coconut (pour carefully because you won't be able to spread the condensed milk - it soaks in where it lands and makes it nearly impossible to press down with a fork because it is so sticky). Mine quickly browned up after being in the oven for only 21 minutes. I will definitely make this again. Wonderful!

Brown Sugar Meatloaf

My family loves this meatloaf and I've made it several times. The ginger gives it a wonderful flavor. The one change I recommend is to sprinkle the brown sugar on top of the meatloaf, over the ketchup. It makes a very nice topping. Delicious!
