Oatmeal Peanut Butter Cookies

Easy Pavlova

PHENOMENAL! I reduced the sugar to 1 cup as others suggested, and I think that the next time, I might even take it down to 3/4c. I sprinkled cornstarch onto the parchment paper before putting the meringue on it, and the finished meringue came off with no problems! Also, I let the meringue cool in the oven, not on a wire rack, so that it didn't rapid cool and crack. I used sliced fresh strawberries and kiwi, and drizzled chocolate syrup on top of the fruit: I am now a superstar! PERFECT summer dessert!

Jamaican Saltfish Fritters (Stamp and Go)

This recipe turned out SO well, I felt like I had been making the fritters for years! I added scotch bonnet peppers, and that gave it the kick that Jamaicans are accustomed to having. I actually made it for a multi-cultural expo at my church and EVERYBODY raved about them!

Sangria Ham

Phenomenal! This is now our Christmas Ham - it smelled heavenly! My only caution is that you tent the ham. All that sugar concentrate basting caused the fatty tips to be a bit charred.

Marinated Barbequed Vegetables

Simple, but delicious recipe. I LOVE the flavor combination of the lemon juice, basil and garlic. To add extra flavour, I also added a large onion cut into large pieces and broiled them in the oven- this is now my go-to recipe for grilled veggies!

YUMMY! I followed the advice and substituted fesh lemon juice and scotch bonnet peppers for the lemon pepper. I also scaled back the soy sauce to limit sodium; the longer you marinate, the better it tastes!

Extreme Chocolate Cake

In a word: PHENOMENAL. I am known for my chocolate cakes and brownies; this recipe just increased the value of my real estate. Also, in my 35 years of baking, this is the best frosting I have ever worked with. This cake was so good, an elderly man who is dying of cancer and who hasn't eaten anything for a week, ate a whole slice and was happy! Bake this cake and bring joy one slice at a time...

Haddock Bubbly Bake

Quick, easy and TASTY! In addition to the slices of onion, I also put slices of scotch bonnet peppers onto the fish, and added fresh broccoli flowerets to the dish before spooning the cream of mushroom soup over everything.

Great recipe! But to get the plantain filling the customary pink that is the tradition, use way more red colouring - 10 drops for 3 plantains is about right.
