Breakfast Sausage

Doesn't seem quite right to review this recipe, as I was unable to follow it exactly. Had neither dried sage, marjoram nor red pepper flakes. But I added lots of minced fresh sage and rosemary. The DH and I agree that it's far better than any sausage I can buy. The subtle flavor of brown sugar and the "hmmmmm. what is that?" touch of clove are perfect with ground pork. Used only half the salt, and it was still a bit over salty for my taste. Could it be because I used kosher salt? I'll never purchase sausage again!

Spanish-Style Quinoa

Farmer's Market Vegetarian Quesadillas

I found this a bit bland, so I added fajita seasoning and used pepper Jack cheese. With these changes, the quesadillas are great!

Outstanding! I had only bread 'n' butter pickles, but I added dried dill. Looking forward to using dill pickles next time. Fantastic with Salmon Cakes II from this site.

Best Cream Of Broccoli Soup

I used frozen broccoli from my own garden and home made chicken broth. Added a bit of grated carrot which didn't change the taste but added color. Topped each bowl with grated cheese and croutons. Yummy and just right on a cold winter night!

Make-Ahead Mashed Potatoes

Made these potatoes for Thanksgiving. Instead of baking, followed others' suggestion and put them in the slow cooker. Put a few pats of butter on top, but it wasn't necessary to keep the potatoes from being too stiff. Rave reviews from guests! Thanks for the post

Pillow-Soft Dinner Rolls

These rolls are awesome. They're so easy to put together. I didn't even get out the mixer. I was out of regular yeast and and to use pizza dough yeast instead. No problems with that substitution. Used White Lily bread flour. I formed all the dough into lots and lots of rolls (more than 24). Baked off six for the 2 of us and froze the remainder. This morning I took another six out of the bag in which they're frozen and let them thaw/rise for about 7 hours, and they came out beautiful. I'll never make any other rolls! Thanks for the post!

Cocoa Oatmeal Cookies

Baking these right now, and boy howdy . . . are they delish! Just a mite salty, tho'. Next time will try them with a smidge more than 1/4 tsp. salt. Only change I made to the recipe was to add some finely chopped walnuts. Thanks for the recipe. This one's a keeper!

Tuna Noodle Casserole II

This was OK. Tuna flavor was too strong for me. Needs something tangy. Will try adding mustard and horseradish next time. Definitely a good recipe to build upon.

Southern Candied Sweet Potatoes

Just what I was looking for. Parents give me a big box of sweet potatoes in the autumn, and every year I attempt candied sweets like my Mom makes. This is it! Used brown sugar and added a splash of Jack Daniels. Not a nutmeg fan, so I substituted ground clove. Syrup was the perfect consistency after cooking according to this recipe. DH & I polished off the leftovers with breakfast this morning. Thanks for the recipe!

Spicy Shrimp and Grits

Yummy . . . yummy . . . yummy. The ultimate comfort food. Made it a one-pot meal (no need to bake) by cooking peppers, onions, and garlic in a large sauce pan first. Then cooked coarse ground grits ("Georgia ice cream") in the same pan with the sauted vegies. It's impossible to find a fresh shrimp in the heart of the Appalachian Mountains, so I thawed out cooked, shelled, deveined shrimp. Plucked the "stems" and zapped them in the microwave for a few seconds, topping the individual bowls of cheese grits with shrimp. The grits alone were divine for breakfast the following day.

This is a great start. Because of personal addiction, I added onion and garlic. Used grill seasoning instead of salt and pepper and honey in place of sugar. Add cheddar cheese, and this is comfort food that will make you wanna smack yo' mama!

Good, moist muffins were a hit with DH and co-workers. As another reviewer suggested, I added 1/2 cup old fashioned oats. Used blueberries instead of strawberries. Substituted apple butter for applesauce, sugar, and cinnamon. Next time I'll add a bit of salt.
