Chicken with Quinoa and Veggies
One of my favorite recipies - it has become a staple in our home. To be honest... I don't measure everything and sometimes use canned diced tomatoes instead of fresh ones. But, it always turns out great!

Turkey Cabbage Rolls
A good, relatively healthy recipe. First, I steamed the head of cabbage for about five minutes and had no problems rolling the leaves. I made a few, minor modifications as follows: I added a bit more onion and some garlic to turkey mixture. I also substituted an additional can of tomato sauce for the paste/water, and added a can (15 oz.) of drained, diced tomatoes. The next time I make this recipe, I will probably reduce (or maybe eliminate) the brown sugar, as the sauce was a bit sweet for my tatse. It's a keeper.

Cheese and Sausage Stuffed Zucchini
Very good recipe. I couldn't find large enough zucchini to stuff, so I bought several smaller ones, and sliced and layered them lasagna style. I also used Italian seasoned ground turkey and sauteed the onion while browning the ground turky. I tried to cut calories by using non-fat cottage cheese and cutting down on the other cheeses. I also used a full can of diced tomatoes (make sure you drain them).
