About this Cook
I'm a Navy Brat, raised mostly in California and Virginia. I've lived in Virginia since I was 13, and now consider myself to be a "come-here" Virginian. I love all styles of cookery, but have a special fondness for Southern cooking.
My favorite things to cook
I love to bake breads, and I love to cook for my family. My favorite dinner to cook would be meatloaf, mashed potatoes and peas.
My favorite family cooking traditions
My family doesn't really have any cooking traditions, other than our spaghetti sauce. My mother learned to make it as a young bride, and she's passed it on to all six of us kids, and we've passed it in turn to our children. We've all changed it a bit, but it's basically the same as Mom makes.
My cooking triumphs
My English Muffin's what I make for Christmas gifts, and all my family and friends wait all year for it!
My cooking tragedies
I tried making chicken soup from scratch was awful! Never really tried again!

Best Moist Chocolate Cake
I was looking for a recipe for chocolate cupcakes that included cream cheese in the batter, not just poured in the center. Found this recipe and replace the margarine with 8 oz softened cream cheese, and I used unsweetened dark cocoa powder. The cupcake came out moist and very tasty, not as sweet as cake. Next time I will adda bit more milk, but otherwise, they were a BIG hit! Next time I want a chocolate cake, I will make this as written, except for adding extra milk.

Old Fashioned Pineapple Upside-Down Cake
I had never made a pineapple upside down cake before I tried this recipe. I found that it was very easy to follow, and after reading some of the other reviews, I added 1/4 c. of the reserved pineapple juice. It turned out very moist and very good! The only problem I had with this recipe is that it did take MUCH longer to bake than the 30-35 minutes noted. It actually took 45 minutes or so, in my oven. Other than that, excellent cake!

Extreme Banana Nut Bread 'EBNB'
This is a wonderful recipe! This recipe actually lived up to it's description! The only thing I changed was the sugar. I used 1 cup white sugar and 1 cup Light brown sugar. I like other reviewers used 2tsp cinnamon and 1 tsp vanilla, but also added a snack size box of raisins as this is how I grew up on Banana nut bread. It only took 55 min to bake, I used smaller loaf pans and got three loafs out of this recipe. If you have a newer oven definitely check on your BNB at the 55min mark. I love this recipe and can not wait to share it with friends and family, or maybe not. :>
