Lemon Garlic Tilapia

Um, I hope the lack of salt in this recipe was a typo... It was greasy and tasteless. Shame on me for trusting a recipe on this site.

Baked Potato Soup

It was a good basic recipe but I did not like the dried basil flavor. Next time I'll use some dried chives and ground red pepper and mix the bacon into the soup instead of just garnishing with it. Make sure you dice the onion very small. Overall, the proportions are pretty good (I used two HUGE potatoes).

Mom's Zucchini Bread

I think there was a little bit too much sugar in this recipe- my loaves baked up with a little sugar crunch on the top crust. It was very moist (but that's a given with this much oil in any sweet bread recipe), and stayed moist and fresh for well over a week.

Four Cheese Macaroni

Made this for a pregnant friend who was craving creamy mac and cheese. She loved it and finished the whole pan within 24 hours. I don't eat cheese, but if her reaction is worth anything, this is definitely a winner!

Italian Cream Cake II

Everyone liked this cake- except for me. It had the texture of a bad carrot cake- I definitely expected something more moist. And the recipe for the icing needed to be doubled to ice three layers. Because the family liked it, I will make it again, however, I will double the icing, use WAY less nuts and coconut in the batter, and more to garnish the cake. I will also probably use almond extract for a more authentic flavor.

Asparagus Wrapped in Crisp Prosciutto

Really easy and tasty. Not sure why people are complaining about the amount of salt- I used thin sliced prosciutto from my butcher, so maybe it has to do with the quality of their meat. I did grind some fresh pepper over the top before roasting.

German Potato Pancakes

Made these tonight for the holidays and they tasted JUST like my grandmother's latkes. I used my cheese grater to grate the potatoes and the onion. I squeezed the extra liquid out with a kitchen towel, but added 3 extra tsp of flour (I had some juicy potatoes!). I also used an entire onion and threw in a little garlic powder, "just cuz." Served em with applesauce and sour cream. I just ate one cold out of the fridge and that was pretty darn good too!

Easy OREO Truffles

Very easy to make, but VERY sweet. I decorated the tops with chocolate jimmies instead of the crushed cookies, and served them in paper truffle cups. They looked really professional, and noone could believe that they only had 3 ingredients. I can't wait to try them with nutter butters and milk chocolate!

Chocolate Peanut Butter Fudge

It was my first time making fudge and this recipe was VERY simple to follow. I did do a little research about how long to stir while it's cooking and how long to beat it after it comes off the heat. All in all, not a bad recipe. Thanks!

Bacon Wrapped Brown Sugar Smokies Dipping Sauce

Great tasting, but hard to serve at parties. They need the "juice" to keep them warm in a chaffer or crockpot, but since the "juice" is just run-off bacon grease, they lack in presentation.

Beth's Spicy Oatmeal Raisin Cookies

Good, but not the best ever. I have no idea what I did wrong, but I expected a lot more. They do smell wonderful while they're baking, but they weren't chewy and had a slight crumbly texture. The taste was good, though. I think I may remake these and substitute more shortening for the butter.

Butter Flaky Pie Crust

Finally! My battle with pie crust is over!! I cubed the butter, and froze it for about 5 minutes while I measured the flour, salt and iced down my water, and used a processor. OMG! Better than grandma's. (sssh, don't tell).

Peachy Moist Muffins

I followed the recipe with the exception of adding 1/2 t of baking powder. They did not have a strong peach flavor (I used peach yogurt), were very pale and did not brown up. Will not make again.

Cabbage Rolls II

Delicious! I read the reviews and used a large can of tomato sauce, extra brown sugar and less black pepper. I didn't have time for the crock pot, so I used a glass baking dish and baked them covered at 350 for 90 minutes. So good, almost better than my Nona's!

Big Al's K.C. Bar-B-Q Sauce

Great basic recipe! I never would have thought of using red wine vinegar. I did add a little more brown sugar. Also, for a great southern touch, add a thinly sliced lemon (remove seeds) and one onion cut into eighths and simmer for an hour.

Banana Pudding IV

Better than grandma's (and that's saying a lot!). I'm not a cool whip fan, so I made me own fresh whipped cream, sweetened with a little splenda. I used a 9x13 pan, and did two cookie-banana-pudding layers. Crushed more nilla wafers over the top. The week after I made it, all I could think about was when I could make it again! Thanks for the great recipe!
