Rum Balls II

I have always used vanilla wafers to make my rum balls, but I didn't have any so I tried this recipe. It turned out pretty well! I highly suggest adding the rum to taste, in case you want more rum flavor, and then add the cream a little at a time for the correct consistency. I used condensed milk because I didn't have heavy cream, and I also added some unsweetened cocoa powder for more chocolate flavor. 1 cake makes about 3 batches of this recipe, so I had some to play with. I made one batch substituting pumpkin for the chocolate and bourbon for the rum. I rolled the balls in coconut. YUM!!!

Fruity Curry Chicken Salad

A family favorite, especially on a hot day! I add a tsp. of ginger and sometimes I cook fresh cranberries, halved, and the zest of an orange with the chicken for a delish variation. Poppyseeds are also a good addition.

Rhubarb Custard Pie I

It's great as is, but this time when I made it I tried something new! I used the whole eggs, not just the yolks. I added a drop of vanilla, zested a clementine, and sprinkled in some sea salt, nutmeg and cinnamon. I doubled the flour and added 1/4c milk like my mom used to do. Finally, I added 1 1/2c fresh, ripe strawberries. My kids made a lattice for the top crust. WOW!!! My family went bonkers for this pie! The flavor really has depth and character. I would suggest decreasing the sugar because the ripe strawberries made it a lot sweeter.

Cream Peas

I was tasked with bringing the vegetables to our Christmas dinner. I ended up being in a bind for time, and I only had a few packages of frozen peas to work with. I found this recipe and decided to give it a try since I had the cream on hand for the holidays. All I can say is that my finicky, anti-veggie family went crazy over these peas, and I had NO leftovers to bring home. I used the full amount of sugar, but I also added pepper (about 3/4 tsp for 8 servings), which adds flavor depth and cuts the sweetness. I like crisp peas, so I would not use canned peas, unless you like it mushy. Easy, quick and delicious recipe!
