Overnight Vegetable Salad

Reviewed: Aug. 19, 2012
This is a delicious salad! Love that it's low in fat and good for you! I did reduce the sugar as I thought 6Tbsp. was quite a bit and I'm glad I did. For the mixed vegies I used the california mix (broccoli, cauliflower and carrots). I could see no reason to go to the time and trouble to steam them when they would be eaten with the other raw vegetables. So I skipped that step and just thawed them a bit. They turned out perfect! I let the salad sit overnight and the next day the vegies were not soggy and were the perfect tenderness. The only thing I disagreed with was the prep time. Maybe it was just me but it certainly took me longer than 20 minutes to do all the dicing and put this together!! Other than that, it's a nice, refreshing, delicious salad!

Pizza Salad I

Reviewed: Sep. 1, 2011
Pizza with no crust so you can have fewer calories? Who are they kidding? Each serving has 40.5 grams of fat! With all that it wouldn't matter if you ate the crust!

Slow-Cooker Chicken Tortilla Soup

Reviewed: Feb. 1, 2010
While this was certainly an easy soup to make it wasn't anything special. Both my husband and I commented that it had no distinct taste. I followed the recipe exactly except that I omitted the tsp of salt (why do you need to add salt to a recipe that has over 900 mg of sodium in each serving??????). I was excited to find this recipe that so many raved about only to be disappointed.

Cornucopia

Reviewed: Nov. 23, 2009
This turned out better than I thought and was much easier than I'd envisioned. I didn't have any trouble with slippage but the braid did fall off during baking. I think it was too heavy. I pinned it back in place with wood picks. Can't wait to fill it with fresh cut veggies - it will be a conversation piece as well as a nice change from the old "relish tray"!

Chocolate Crinkles II

Reviewed: Nov. 10, 2009
My 3-year old granddaughter and I made these. I substituted applesauce for the oil and Egg Beaters for the eggs. The taste was delicious and the texture reminds me of a soft brownie which was great! The only disappointment was that we could not roll them into balls. The dough was so sticky I had to drop the dough by teaspoons onto the cookie sheet. I put the dough in the freezer as suggested by another reviewer but that didn't help. They tasted good but certainly didn't have the presentation like the picture.

Slow Cooker Chicken Taco Soup

Reviewed: Nov. 8, 2009
This was pretty good but seemed to need a little more zing! I cut up the chicken breasts into cubes, cooked them and then put them in the crockpot with the rest of the ingredients. It seemed simpler that way.

Raspberry Oatmeal Bars

Reviewed: Jul. 22, 2009
I took the suggestions of others and substituted applesauce for the margarine and lemon juice for the water. Everyone loved them and asked for the recipe. They were too sweet for me! It was hard spreading the cake mix and oatmeal mixture in the pan as it was VERY sticky.

Almost No Fat Banana Bread

Reviewed: Feb. 1, 2009
Anyone who likes "real" banana bread will probably not like this low-fat recipe. Mine was a tad rubbery. I did add salt and vanilla and also added a mixture on brown sugar and water sprinkled on the top of it before baking. That was a nice addition.

Low-Fat Blueberry Bran Muffins

Reviewed: Jan. 22, 2009
These were okay. They held together well and were very moist. But I really didn't care for the "bran" texture.
